Antonio Latini’s Neapolitan cookbook, Lo scalco alla moderna, belongs to an important documentary moment in the history of frozen desserts. Its two volumes appeared in 1692 and 1694, and the second is generally associated with an early printed formula for a milk-based sorbet. The text demonstrates that cooks serving wealthy households in southern Italy knew how to freeze sweetened mixtures containing dairy. It does not prove that Naples—or Latini himself—invented ice cream. Water ices and related cooling practices had older histories around the Mediterranean and in parts of Asia, while exact lines of transmission remain disputed.
Latini’s frozen preparation occupied a culinary category whose boundaries differed from modern usage. Italian sorbetto could encompass flavored water ices and, in this instance, a frozen milk mixture. Sugar supplied sweetness and affected freezing behavior; milk provided fat, protein, and body. Other early ices could be flavored with fruits, citrus, chocolate, spices, or flower waters, but these should not automatically be assigned to every recipe. Modern labels such as gelato and ice cream are useful comparisons, not exact translations of all seventeenth-century terms.
Making such a dessert required organized supplies and skilled labor. Snow or natural ice was collected seasonally and preserved in insulated pits or ice houses. In the kitchen, a vessel holding the sweet mixture could be surrounded by ice combined with salt. The salt lowered the freezing point of the surrounding meltwater, making the vessel cold enough to freeze its contents. Stirring or scraping limited the growth of large ice crystals and produced a smoother texture, although surviving instructions and equipment do not justify imagining the consistently aerated texture of industrial ice cream.
The dessert signaled wealth because refined sugar, dairy, stored ice, labor, and specialized service all carried costs. Serving something frozen in a warm climate displayed command over materials and temperature as much as culinary taste. Printed recipes helped convert household expertise into reproducible instruction, but readership remained socially restricted.
Over the eighteenth and nineteenth centuries, purpose-built freezing pots and hand-cranked churns made production more dependable. Expanding sugar supplies and urban ice trades widened access, though often through exploitative plantation economies and demanding ice-harvesting labor. Mechanical refrigeration, pasteurization, homogenization, and refrigerated transport later detached ice cream from winter ice and local dairies. Modern products commonly add egg yolk, stabilizers, emulsifiers, flavorings, or incorporated air. Today’s scoop therefore descends from the same basic manipulation of sweetened dairy and cold, but its safety, texture, price, seasonality, and availability are products largely of industrial technology.

Historical context
Naples was governed within the Spanish Habsburg world and remained one of Europe’s largest cities, despite the catastrophic plague of 1656. Courtly and aristocratic kitchens drew on Mediterranean citrus, regional dairy, imported sugar, and increasingly global commodities such as cacao. Natural ice was still a harvested and stored resource rather than a mechanically manufactured one. Across Europe, printed cookbooks were circulating elite techniques more widely, while Atlantic plantation systems were rapidly increasing sugar supplies through coerced and enslaved labor.
