Idli is a soft, mildly sour cake made today from a fermented batter of rice and black gram, also called urad. Steaming sets the aerated batter without forming a crust, producing the white, porous texture associated with South Indian breakfasts. It is commonly eaten warm with coconut chutney, sambar, or dry spice-and-pulse powders mixed with oil. The familiar form is nutritionally and technically more than a rice cake: black gram contributes protein and, during fermentation, helps create a batter capable of retaining gas.

The dish does not enter history as a fully documented modern recipe. A Kannada work conventionally dated to about 920 mentions a food called iddalige in a list associated with hospitality. This is important early written evidence for the name or a closely related food, but the passage does not establish a rice-and-black-gram formula, overnight fermentation, molded steaming, or the exact texture of present-day idli. A twelfth-century Sanskrit courtly culinary text describes a related preparation based on black gram, but its seasoning and cooking method differ materially from modern practice and are often interpreted as involving formed pieces cooked in fat. Such evidence shows a family of changing preparations rather than one recipe remaining unchanged.

Closer versions emerged in later South Indian culinary traditions as rice joined black gram and steaming became central. Exactly when all defining features converged remains uncertain. Claims that idli was imported from Southeast Asia, invented by particular foreign communities, or created at one identifiable court are debated hypotheses, not demonstrated origins. Maritime exchange across the Indian Ocean could transmit techniques and ideas, but similarity alone cannot prove a direct line of descent.

In the now-standard method, rice and hulled black gram are soaked separately, ground with water, combined, salted either before or after fermentation according to local practice, and left until the batter expands and develops acidity. Warm conditions encourage lactic-acid bacteria and yeasts already associated with the ingredients and kitchen environment. The batter is portioned into greased depressions and steamed. Rice variety, pulse proportion, grinding technology, temperature, and fermentation time alter sourness and volume. Older stone grinding remains valued for texture, while electric wet grinders, commercial batter, refrigeration, and standardized metal or electric steamers have reduced labor and made production more predictable.

Idli spread far beyond its strongest associations with Karnataka and Tamil Nadu through migration, restaurants, institutional catering, packaged mixes, and refrigerated batter. Modern variants use millet, semolina, oats, vegetables, or altered fermentation, although these should not be projected backward onto the medieval references. Its historical importance lies less in a single invention date than in the gradual convergence of pulse fermentation, cereal preparation, grinding, and steam cooking into an inexpensive and widely shared meal.

Historical context

The southern Deccan and far south contained competing courts, temple centers, agrarian settlements, and expanding networks of craft and trade. Rashtrakuta power dominated much of the Deccan, while Western Ganga authority remained influential in parts of present-day Karnataka and the Cholas were rising farther southeast. Rice cultivation was well established in suitably watered districts, while pulses supplied an important complement to cereals. Kannada, Sanskrit, and Tamil literary cultures flourished alongside oral household knowledge. Ports on both coasts participated in Indian Ocean commerce reaching Sri Lanka, the Persian Gulf, East Africa, and Southeast Asia, although long-distance contact by itself does not establish a foreign origin for idli.
