Charqui is meat made durable by removing most of its water. In the Andes, the classic raw material was llama or alpaca, cut into strips or thin pieces and exposed to the cold, dry conditions of the high plateau. The Quechua-derived word ch’arki was recorded by Spanish colonial writers and passed into Spanish as charqui. English “jerky” developed from that name much later. The linguistic relationship is well supported; the idea that all dried meat descended from an Andean invention is not, because societies in many regions independently dried meat.

Andean charqui long predates its first colonial descriptions, although no single invention date is known. Around 1500 it belonged to a food system built around domesticated camelids, potatoes, quinoa, maize, and other highland resources. Llamas supplied meat while also carrying loads; alpacas were especially valued for fiber but could also be eaten. Durable provisions were important in communities separated by steep terrain and in the Inca state, which moved people and goods over an extensive road network. Written accounts describe preserved foods and state storage, while archaeological camelid remains establish widespread exploitation. Bones alone, however, seldom demonstrate that a particular carcass was dried.

Production depended on climate as much as equipment. Meat was butchered into pieces that exposed a large surface area, then repeatedly frozen during highland nights and dried under intense sun in air with low humidity. Ethnographically documented methods include pressing or flattening pieces and, in some traditions, using salt, but procedure varied. Removing water slowed microbial growth, reduced weight, and produced a compact source of protein. The result could be carried, stored, eaten after further cooking, or broken into soups and stews. Historical formulations should not be imagined as identical to soft, heavily seasoned packets of modern commercial jerky.

After the Spanish invasion, the name charqui remained current while the range of animals expanded. Beef, horse, sheep, and other introduced livestock could be dried alongside camelid meat. Colonial mining settlements and transport networks created large markets for portable provisions, although fresh meat and plant staples remained equally important. Related dried-meat industries developed across Spanish and Portuguese America through mixtures of Indigenous, Iberian, African, and local practices; their precise relationship to Andean charqui differs by region.

Today, charqui still names several South American dried-meat traditions. Industrial jerky is commonly marinated or salted beef dried with controlled heat, sometimes with smoke, sugar, and curing agents. It preserves the central strategy of reducing moisture, and its English name carries an Andean linguistic legacy, but major changes in livestock, seasoning, food-safety controls, texture, and commercial packaging separate it from precolonial ch’arki.

Historical context

The Inca state governed much of the Andean cordillera through provincial administration, labor levies, storehouses, and a road system extending for tens of thousands of kilometers. Pack llamas, rather than wheeled carts, moved goods through environments ranging from Pacific deserts to plateaus above 4,000 meters. Spanish forces entered the central Andes in 1532, after epidemic disease and an Inca succession war had already destabilized the realm. Population estimates remain disputed, but the Andes supported millions of people and some of the largest urban and agricultural systems in the pre-Columbian Americas.
