Kapenta is not a single fixed recipe but a preserved small-fish food and the foundation of major inland fisheries in south-central and eastern Africa. The name commonly refers to Tanganyika sardine, Limnothrissa miodon, especially in Zambia and Zimbabwe. In Lake Tanganyika, catches may also include the related Stolothrissa tanganicae, often known locally by names such as dagaa. These distinctions matter: only Limnothrissa was successfully transferred to Lake Kariba, where a new commercial fishery emerged decades after the reservoir was created.
On Lake Tanganyika, communities had long harvested small pelagic fish, but twentieth-century engines, lamps, larger nets, and expanding markets increased the scale and range of the trade. Fishers typically work at night, using lights to concentrate shoals before raising fine-meshed lift nets. Lake Kariba’s history is more specific. After the Zambezi was dammed in the 1950s, Tanganyika sardine was introduced during the late 1960s. The population established itself, and commercial harvesting expanded in the 1970s and afterward. Kapenta production there therefore cannot be securely dated to 1900.
Preservation begins quickly because small fish deteriorate rapidly in warm conditions. The catch is landed, drained, and spread in the sun on racks, nets, concrete slabs, mats, or sometimes the ground. Drying the fish whole reduces weight, extends storage life, and allows sacks to travel to inland towns without refrigeration. Quality varies with weather, handling, insects, dust, and drying surface. Smoking, salting, freezing, and refrigerated sale also occur, but sun-drying remains especially important where energy and cold-chain infrastructure are costly.
At the table, dried kapenta may be rinsed and simmered or fried with oil, onion, tomato, and chile. It is commonly served as a relish beside nshima in Zambia or sadza in Zimbabwe. Because the head and softened bones are eaten, kapenta can provide substantial calcium and vitamin B12 as well as protein, although nutrient content changes with species, drying, storage, and the amount of oil or sauce used.
Kapenta linked lake fisheries to the industrial diet without becoming an industrially formulated food. Motors, synthetic netting, road transport, urban demand, and reservoir engineering transformed a perishable shoaling fish into a widely traded commodity. That success has also brought declining catches in some areas, disputes over mesh size and fishing effort, uneven earnings, and concern for juvenile fish. Modern kapenta consequently represents both food-system ingenuity and the vulnerability of an affordable staple when aquatic ecosystems are intensively exploited.

Historical context
Around 1900, the world held roughly 1.6 billion people and European colonial rule was reshaping taxation, labor, transport, and commodity markets across much of Africa. Lake Tanganyika lay among territories controlled by Germany, Belgium, and Britain, while the lands around the future Lake Kariba were under British colonial or chartered-company authority. Railways were beginning to connect parts of the interior to mines and ports, but most fish preservation still depended on sun, smoke, and local transport. Lake Kariba did not yet exist: construction of the dam began in the 1950s, and its kapenta fishery developed only after a Tanganyika sardine was introduced in the late 1960s.
