Klipfish is split cod preserved by both heavy salting and drying. The result is a flattened, firm fish with little available moisture, capable of travelling far beyond the range of fresh cod. Its Norwegian name refers to the rocks, or klipper, on which fish were historically laid to dry. In Portuguese-speaking markets it became closely associated with bacalhau; in Italy, related salted cod is called baccalà. These names may also cover products made elsewhere, so they do not by themselves establish Norwegian origin.
Norway already possessed a much older stockfish industry, in which cod was air-dried without salt. Klipfish was therefore not simply another name for stockfish but a commercially important adaptation requiring substantial supplies of salt. Production appeared in Norway by around the end of the seventeenth century, although an exact founding date is not secure. Kristiansund and the surrounding Nordmøre coast became major centers during the eighteenth and nineteenth centuries, benefiting from cod fisheries, suitable drying grounds, merchants, and access to Atlantic shipping.
Fresh cod were headed, gutted, split open, and usually had much of the backbone removed. Producers packed the flattened fish in layers with salt, allowing brine to draw out moisture and cure the flesh. After salting, workers arranged the fish on clean coastal rocks or wooden surfaces during suitable weather, repeatedly turning and stacking them as drying progressed. This seasonal process demanded judgment: rain, contamination, inadequate salting, or uneven drying could spoil valuable cargo. The finished slabs were hard and intensely salty.
Before cooking, households soaked klipfish in repeated changes of water, often for one to three days depending on thickness and desired saltiness. The rehydrated fish could then be simmered, baked, fried, shredded, or combined with potatoes, onions, olive oil, tomatoes, peppers, legumes, or cream. Recipes varied enormously by destination and period. In Portugal it became both everyday food and festive fare; Brazilian and Caribbean cooks incorporated salt cod into local dishes shaped by colonial trade and available crops.
Durability made klipfish valuable to merchants, ships, urban consumers, and institutions that needed dependable protein. Lower grades also entered provisioning systems for laborers and enslaved people, linking the food to the coercive inequalities of Atlantic commerce. Modern klipfish is commonly dried under controlled indoor conditions, producing greater consistency and reducing dependence on weather. It remains culturally important, but its production also depends on fisheries regulation and the condition of cod populations. The essential practice survives: salt and dehydration transform a fragile seasonal catch into a food that can cross oceans and acquire new culinary identities.

Historical context
Norway formed part of the composite kingdom of Denmark–Norway, and most long-distance commerce was controlled through chartered towns and merchant networks. Bergen remained central to the northern fish trade, while Kristiansund received formal town privileges only in 1742 and expanded rapidly as klipfish commerce developed. Atlantic shipping linked northern European fisheries with Iberian and Mediterranean consumers and with colonial ports across journeys of thousands of kilometers. Salt was itself a strategic traded commodity: unlike unsalted stockfish, klipfish production depended on reliable imported supplies as well as cod, labor, drying space, and seaworthy cargo vessels.
