Kocho is a fermented staple made from enset, a banana relative cultivated for its massive pseudostem and underground corm rather than for sweet fruit. It is especially associated with food systems of Ethiopia’s southern and southwestern highlands. Enset cultivation and processing are almost certainly older than the assigned date of 1700, but the emergence of kocho cannot presently be fixed to a single year. Its history is better understood as the cumulative development of a regional perennial-crop system than as the invention of one identifiable cook.
Processing transforms tough, fibrous plant tissues into food. Leaf sheaths are separated from a mature pseudostem and scraped to release starchy pulp; the corm is grated or pulverized and mixed with that material. Coarse fibers are removed, and the moist mass is packed into a lined pit or otherwise sealed. Some traditions add material from an earlier fermentation or a locally prepared starter, while others rely more heavily on microorganisms already present on the plants, tools, and processing surfaces. Fermentation lasts from weeks to many months, with practices varying among communities and households. The fermented dough is then kneaded, formed into flat rounds, wrapped or placed on a hot baking surface, and cooked into a dense, slightly sour bread.
Kocho supplies primarily carbohydrate and relatively little protein or fat. It is therefore commonly eaten with foods that broaden both flavor and nutrition, including milk products, cabbage, pulses, stews, or meat. In Gurage food traditions it is a particularly well-known accompaniment to kitfo. Other enset products include boiled corm, often called amicho, and bulla, a finer starch separated during processing; these should not be confused with kocho itself.
The food’s wider importance comes from how enset changes the timing of harvest. A living plant can remain in the field for years, so households need not harvest the entire crop in one season. Once fermented, kocho can also be held for later use. These characteristics can buffer seasonal shortages and some drought-related failures of annual cereals. Enset is not invulnerable, however: plant disease, loss of planting material, severe prolonged drought, land pressure, and the heavy labor of processing can all undermine that protection.
Modern kocho remains closely tied to household knowledge, clone selection, and women’s skilled labor, although commercial processing, urban markets, and scientific study of fermentation are expanding. Researchers have examined starter cultures, pit hygiene, fermentation time, and improved processing equipment, but no single standardized method represents all traditions. Kocho’s enduring significance lies in the successful conversion of a bulky perennial plant into a sour, transportable, and comparatively storable staple—an adaptation shaped by highland ecology and generations of practical fermentation knowledge.

Historical context
The Ethiopian highlands contained a mosaic of Christian, Muslim, and locally governed societies linked by regional exchange in livestock, salt, cloth, coffee, and grain. The Solomonic kingdom was entering the Gondarine period in the north, while southern highland communities followed distinct political and agricultural trajectories. Oromo migrations and state formation had reshaped much of the region during the preceding centuries. Globally, the human population was roughly 600 million, and long-distance commerce increasingly connected the Red Sea and Indian Ocean to expanding European maritime networks. Enset agriculture, however, remained a locally adapted system based largely on vegetative propagation, household gardens, and intensive knowledge rather than global commodity trade.
