Kombucha is a tart, lightly sparkling drink produced by fermenting sweetened tea with a mixed community of yeasts and bacteria. During fermentation, a cellulose-rich pellicle commonly forms at the liquid’s surface. This floating layer is often called a “tea mushroom,” although it is neither a mushroom nor the entire culture. Yeasts convert part of the sugar into ethanol and carbon dioxide; acetic-acid bacteria then oxidize some ethanol into organic acids. Its early history is much less certain than modern origin stories suggest. Claims that kombucha was brewed in China in 221 BCE, or carried to Japan by a Korean physician named Kombu, are repeated frequently but lack secure contemporary documentation. More defensible evidence places “tea mushroom” cultures in Russia and parts of northeastern Eurasia around the late nineteenth and early twentieth centuries. Even here, the evidence documents circulation rather than a single point of invention. The year 1900 is therefore best treated as an approximate marker for documented emergence, not an established birth date.
Traditional household preparation is simple but microbiologically complex. Black or green tea is infused, sweetened, cooled, and inoculated with fermented liquid and a portion of pellicle from an earlier batch. The vessel is covered with breathable cloth and left at room temperature, commonly for several days or longer. Fermentation time, temperature, tea, sugar concentration, and the organisms present determine sweetness, acidity, carbonation, and alcohol. A second fermentation in a sealed bottle may build more fizz, sometimes with fruit, herbs, or spices added.
The culture spreads readily because each batch can produce material for the next. This made kombucha suited to exchange among households, much like sourdough starters or other maintained fermentation cultures. During the late twentieth century it entered alternative-health circles in Europe and North America. Commercial production then converted a variable domestic ferment into a refrigerated, standardized beverage, often filtered, flavored, carbonated, or formulated to remain below regulated alcohol thresholds.
Kombucha’s significance lies less in unproven medicinal antiquity than in its modern role at the intersection of tea, fermentation, and wellness commerce. Evidence does not support treating it as a cure-all, and its microbial composition is not uniform. Commercial products vary widely in sugar and acidity, while uncontrolled home batches may become excessively acidic, contaminated, or more alcoholic than expected. Nevertheless, kombucha has helped renew public interest in living cultures and household fermentation, linking an early modern Eurasian “tea mushroom” practice to today’s global market for fermented drinks.

Historical context
Railways and steamships were connecting Russian, Chinese, Japanese, and European markets more closely than ever before, while industrial tea production moved enormous quantities of leaf from Asia into urban and rural households. Microbiology was becoming an experimental science following nineteenth-century work on fermentation and disease, but domestic brewers still maintained mixed cultures through observation and repeated practice rather than microbial identification. Northeast Asian borderlands were also zones of migration and commercial exchange, making movement of a portable tea culture plausible even though kombucha’s precise route and birthplace remain undocumented.
