Reconstruction
Manioc, or cassava, became one of tropical South America’s most consequential food plants. Archaeobotanical research supports its early cultivation or management in southwestern Amazonia, near the region generally considered central to its domestication. Evidence around 4000 BCE concerns the plant and human-shaped landscapes, however, not an excavated cassava flatbread. Calling the food “bread” at this date is therefore a reasonable reconstruction of a possible use, not a directly observed dish.
Cassava offered cultivators a valuable combination of qualities. Its roots are rich in starch, can remain in the ground until needed, and tolerate relatively poor soils and irregular rainfall. Yet the crop also posed a serious problem: its tissues contain cyanogenic compounds that can release hydrogen cyanide. Concentrations differ greatly among varieties, with so-called bitter cassava generally requiring more elaborate treatment than sweet cassava. Safe use depended on accumulated knowledge of varieties, harvesting, and processing.
In historically documented Indigenous systems, bread making began by peeling and grating the roots. Bitter cassava pulp could then be washed, fermented, and squeezed—often in a long woven press—to remove liquid. Heating the resulting meal on a ceramic or stone griddle drove off moisture and helped reduce residual cyanide. Cooks formed thin, crisp rounds or thicker cakes, depending on local tradition. The dry forms resisted spoilage far better than fresh roots and were useful for travel, exchange, warfare, fishing expeditions, and periods when gardens could not be visited.
No evidence presently demonstrates that every element of this mature processing sequence existed in southwestern Amazonia by 4000 BCE. Graters, presses, perishable baskets, and wooden implements seldom survive, while microscopic plant remains may identify manioc without showing whether it was boiled, fermented, toasted, or baked. Early communities may have eaten relatively low-cyanide varieties by several methods. Bread production should consequently be treated as possible rather than proven for the card’s stated date.
By the time Europeans recorded Indigenous life in the Caribbean, Amazonia, and coastal South America, cassava breads and toasted meals were established staples. Colonial expansion then carried cassava farther through Atlantic networks, including to Africa, where it became a major crop under very different political and agricultural conditions. Modern casabe and related Indigenous flatbreads preserve the basic principle: convert a bulky, perishable root into a safer, concentrated, transportable food. Their continued preparation is not a fossilized survival from a single moment, but a living technology whose precise antiquity remains uncertain.

Historical context
Roughly six thousand years ago, southwestern Amazonia was occupied by Indigenous communities already modifying forests through selective planting, burning, cultivation, and repeated settlement. Manioc domestication probably developed over a long interval rather than in one event. Elsewhere, farming villages were expanding in parts of the Andes and Old World, but Amazonian food systems followed locally rooted trajectories based on tropical plants, fishing, hunting, and forest management. Rivers provided the principal corridors for movement and exchange across otherwise difficult terrain.
