Mayonnaise becomes clearly visible in French culinary print in the early nineteenth century. André Viard’s 1806 cookbook, Le Cuisinier impérial, included “poulets en mayonnaise,” an important early occurrence of the word in a published culinary setting. That evidence documents French usage, not the sauce’s invention in that year. It also does not prove the familiar tale that mayonnaise was created after a French victory at Mahón in 1756. Several competing etymologies and places of origin have been proposed, and the Mahón explanation remains attractive but unverified.

In its now-familiar form, mayonnaise is a cold emulsion of oil dispersed through a water-based mixture containing egg yolk and an acid such as vinegar or lemon juice. Lecithin and other compounds in yolk help keep tiny oil droplets suspended rather than separating into a slick. Mustard may add flavor and assist stability, while salt and sometimes pepper or other seasonings complete the sauce. Cooks traditionally produced it by beating yolk and acid while adding oil slowly—at first drop by drop, then in a thin stream. Temperature, vigorous mixing, and the pace of addition mattered; a “broken” sauce could sometimes be recovered by working it gradually into a fresh yolk.

The terminology and recipes were not fixed immediately. Early nineteenth-century dishes called mayonnaise could involve cold poultry or fish coated with, or presented in, a rich sauce, and surviving printed formulas do not always map neatly onto the standardized condiment sold today. French culinary writing nevertheless helped codify mayonnaise as one of the principal cold sauces. It became a foundation for numerous variations containing herbs, chopped pickles, capers, garlic, or other flavorings and entered the preparation of salads, sandwiches, cold meats, fish, and shellfish.

During the nineteenth and twentieth centuries, mechanical beaters and food processors reduced the labor required to form the emulsion. Commercial manufacture changed it more profoundly. Pasteurized eggs or egg products, refined oils, controlled acidity, stabilizers, and sealed containers made consistent mayonnaise possible on an industrial scale. Refrigeration and food-safety controls became important because homemade versions prepared with raw egg can carry microbial risk. Commercial formulations also diverged by country in sweetness, acidity, oil content, and permitted ingredients.

Modern mayonnaise therefore represents both continuity and transformation: it retains the basic culinary principle of an egg-stabilized oil emulsion, but factory production has made it inexpensive, uniform, and globally available. The 1806 appearance is best understood as a milestone in documentation and culinary naming, not a securely dated moment of invention.

Historical context

Napoleonic France dominated much of continental European politics, while printed cookbooks increasingly transmitted elite kitchen practice beyond individual courts and households. European cities were growing, refined vegetable oils moved through expanding commercial networks, and professional French cuisine was developing a more systematic vocabulary for sauces and service. Mixing still depended on hand labor: the rotary egg beater, domestic electric appliances, pasteurized egg products, and modern refrigerated distribution all lay in the future.
