Natto is a fermented soybean food best known for tender whole beans bound by sticky, elastic threads. Its characteristic texture and pungent aroma result from strains of Bacillus subtilis commonly called natto bacteria. The modern food is especially associated with eastern and northeastern Japan, where it is frequently stirred vigorously and served over rice, often with mustard, chopped scallion, seaweed, or a soy-based sauce. Its simplicity conceals an important historical problem: medieval references to natto do not always establish that their subject was the unsalted, stringy product familiar today.
The word natto appears in writings from late Heian Japan, around the eleventh and twelfth centuries, but early usage may have encompassed more than one fermented soybean preparation. Traditional sticky natto could be made by soaking soybeans, cooking them until soft, and wrapping them in clean rice straw. Bacillus spores naturally present on straw tolerate substantial heat and can multiply rapidly when the warm, moist beans receive sufficient oxygen. During fermentation the bacteria break down soybean components and produce the mucilaginous material responsible for natto’s threads. Historical temperatures and fermentation times were not standardized, so outcomes must have varied with weather, vessel, cleanliness, and household practice. Straw packaging also connected soybean fermentation to the by-products of rice agriculture.
Natto was eaten as a savory accompaniment rather than as a complete meal. Combined with rice, it added protein, fat, fiber, minerals, and strong flavor to a grain-based diet. Fermentation softens the cooked beans and changes their aroma and chemical composition, although broad claims that it made medieval populations uniformly healthier exceed the evidence. Its acceptance also remained regional: natto became deeply embedded in some local diets while remaining disliked or uncommon in others.
During the twentieth century, selected starter cultures, temperature-controlled incubation, sanitary factories, small plastic trays, and refrigeration replaced much of the uncertainty of straw fermentation. Commercial products now range from small-bean and chopped varieties to straw-wrapped specialty natto, while packets of sauce and mustard shape everyday service. The modern dish therefore preserves an old biological partnership among soybeans, heat, microbes, and rice-growing landscapes, but its standardized texture, safety, packaging, and year-round availability are substantially modern achievements.

Historical context
Japan was governed through the late Heian court at Kyoto, although provincial warriors, landed estates, temples, and shrines exercised growing economic power. Wet-rice farming structured taxation and rural labor, while soybeans and other dry-field crops supplemented grain production. Buddhist institutions maintained connections to continental religious and culinary traditions, including fermented soybean foods. Eastern Japan was less politically centralized and urbanized than the Kinai region around Kyoto; the warrior government at Kamakura would not be established until the late twelfth century. Rice straw was an abundant agricultural by-product used for cordage, mats, wrapping, fuel, and containers, making its use in food processing technologically plausible even where direct medieval evidence is incomplete.
