Pla haeng literally means “dried fish” in Thai, identifying a broad preserved-food category rather than one standardized recipe. Freshwater fish from rivers, canals, floodplains, and rice fields could be dried alongside marine fish brought from the coast. Species, size, salt level, and final texture varied substantially. The exact emergence of the Thai term and practice cannot securely be assigned to 1600, but drying and salting fish were long-established Southeast Asian responses to seasonal abundance, heat, and the difficulty of transporting a perishable catch.

Traditional preparation begins with fresh fish that are cleaned and, depending on size, gutted, split, butterflied, or left whole. Chiles were an early modern arrival from the Americas, but their adoption into Thai cooking does not establish that dried fish itself originated during the Columbian Exchange. Courtly and later culinary traditions include refined sweet-savory uses of dried fish, yet surviving named recipes are generally later and should not automatically be projected back to precisely 1600.

Drying mattered because fish harvests fluctuated with monsoon rains, flood cycles, spawning runs, and marine conditions. Preservation allowed part of a temporary surplus to be retained, sold, or carried inland. The essential principle remains recognizable: remove water, often add salt, and transform a rapidly spoiling catch into a durable ingredient whose intense flavor means that a small portion can season a larger meal.

Historical context

The Ayutthaya kingdom dominated much of the Chao Phraya basin and its capital was one of mainland Southeast Asia’s major commercial centers. River transport connected rice lands, fisheries, and urban markets, while merchants linked Siam to ports around the South China Sea and Indian Ocean. American chiles were entering Asian cuisines through maritime exchange, but fish drying and salting were much older regional technologies. Seasonal monsoon rainfall and extensive floodplains produced large but fluctuating catches, making preservation economically important.
