Rooibos is an infusion made from the leaves and fine stems of Aspalathus linearis, a leguminous shrub native to a limited part of South Africa’s winter-rainfall region. When infused without milk or sugar, it produces a mild, aromatic drink containing no caffeine. Most rooibos sold today has a red-brown color created by controlled oxidation; unoxidized “green rooibos” remains lighter and more vegetal.

Exposure to oxygen activates enzymatic reactions that change the color and flavor before the material is spread out to dry. The process is popularly called “fermentation,” but it is primarily oxidation rather than microbial fermentation. Green rooibos is dried with oxidation minimized. Brewing practices vary: loose leaves or bags may be steeped for several minutes, while longer simmering creates a stronger drink. Milk, lemon, honey, or sugar are optional additions rather than defining ingredients.
Rooibos became a cultivated commercial crop mainly in the twentieth century. Merchants promoted it as a local alternative to imported tea, while growers and agricultural experimenters developed methods for obtaining seed and establishing plantations. Standardized processing made consistent export possible. The crop nevertheless retained an unusually restricted production geography because the plant is adapted to the Cederberg and neighboring areas. Commercial expansion also raises questions about how indigenous plant knowledge was acknowledged and who benefited from it.
Today rooibos appears as conventional tea bags, loose infusions, espresso-style concentrates, iced drinks, and flavored blends. Its global appeal rests partly on its caffeine-free character and low energy content when served plain. Claims that it cures disease go beyond what can be established from ordinary beverage use. Its defensible significance lies instead in the transformation of a geographically restricted South African plant into an internationally recognized infusion—and in the still-incomplete history of the local knowledge behind it.

Historical context
The Cape was governed by the Dutch East India Company and linked by shipping to Europe and the Indian Ocean. Imported Asian tea was already part of colonial consumption, while pastoralist, farming, and foraging communities maintained extensive knowledge of local plants. Colonial settlement was advancing beyond Cape Town into lands occupied by Khoikhoi and San peoples, producing trade and cultural exchange alongside dispossession, coercion, and conflict. The Cederberg remained a rugged, sparsely settled landscape whose winter rainfall and nutrient-poor soils supported plant communities found nowhere else.
