Roquefort is a salty, blue-veined cheese made from sheep’s milk and matured in the limestone caves of Roquefort-sur-Soulzon. Firmer evidence emerges in the later Middle Ages. In 1411, Charles VI granted inhabitants of Roquefort privileges concerning the maturation of cheese in their caves, demonstrating that both the place and its ripening environment had acquired commercial importance.
The basic production sequence begins by coagulating sheep’s milk with rennet. The curd is cut, drained, molded, and salted but not compressed so tightly that all internal openings disappear. Blue mold requires oxygen, and the cavities within the paste allow it to spread. Deliberate piercing of wheels with needles improves aeration, although the date at which this became systematic is uncertain. In later traditional practice, mold was propagated on bread, commonly rye bread, which was dried and ground before being introduced to the curd. Modern makers can employ selected cultures, producing more predictable ripening than medieval cheesemakers could achieve.
The caves did more than add flavor. Their stable humidity and temperature provided preservation and controlled transformation before mechanical refrigeration. Sheep’s milk, naturally rich in fat and protein, became a durable, concentrated product that could travel farther and command a higher price than fresh milk. The trade connected upland flocks and milk producers across the surrounding region with specialized cave maturers and merchants at Roquefort. Legal privileges also protected local economic interests and restricted who could profit from the famous name.
Modern Roquefort remains tied to this geography through protected-origin rules. Milk production, hygiene, mold inoculation, piercing, wrapping, and maturation are now regulated, while laboratory-selected strains and temperature monitoring reduce uncertainty. The cheese is eaten in small portions, served with bread, fruit, or nuts, crumbled into salads, and incorporated into sauces. Its continuity lies not in an unchanged medieval recipe but in the durable relationship among sheep’s milk, blue mold, skilled maturation, and the ventilated caves that made the settlement’s name internationally recognizable.
