Historical context
The Safavid dynasty was only beginning: Shah Ismail I established Safavid rule in 1501 and made Twelver Shiʿism central to the emerging Iranian state. Iran’s cities and armies depended on regional grain production, irrigation, caravan transport, mills, and professional bakeries. Wheat breads were already fundamental across western and central Asia, but the fixed date of 1500 is too precise for sangak’s documented emergence.
