Tahini is a concentrated sesame paste whose apparent simplicity conceals several choices: the seeds may be hulled or left whole, raw or roasted, and ground to anything from a coarse meal to a flowing cream. The Arabic name, ṭaḥīna, is connected with grinding. Medieval Arabic culinary literature provides evidence for crushed and ground sesame preparations, while sesame oil and the cultivation of sesame are much older. That long history does not, by itself, prove that modern tahini existed unchanged in antiquity.

Assigning the paste a precise origin around 1200 in the Levant is difficult. Medieval cookbooks circulated across Arabic-speaking courts and cities, particularly in Iraq, Syria and Egypt, and their sesame preparations varied. They document a developed culinary world in which seeds were pounded, oils extracted, sauces seasoned and ingredients traded over considerable distances. Some preparations are recognizable relatives of tahini, but differences in terminology and recipe detail make a single invention date or birthplace uncertain.

Traditional production begins by cleaning sesame seeds. Hulling removes much of the fibrous outer coat and produces a paler, milder paste; unhulled seeds yield a darker, more bitter product. Gentle roasting intensifies aroma, although raw-seed tahini is also made. Historically, grinding would have relied on mortars or stone mills, a reasonable reconstruction from available technology rather than a universal documented method for every medieval recipe. Crushing ruptures oil-rich cells, allowing the seed's own fat to create a suspension. Additional oil is therefore optional rather than essential. Modern mills produce a finer, more uniform texture than hand pounding generally could.

Tahini can be eaten undiluted, but cooks commonly whisk it with water, lemon juice or another acid, salt and sometimes garlic. The mixture initially tightens as water is added, then loosens into a creamy sauce. It accompanies vegetables, fish, breads and grilled foods and forms a defining component of many modern hummus recipes. It also contributes richness to tarator-style sauces and supplies the sesame base for widely distributed forms of halva. These associations developed across overlapping regional cuisines and should not be treated as the exclusive heritage of a single modern nation.

Industrial hulling, mechanical grinding and sealed packaging transformed tahini from a locally milled ingredient into a globally traded pantry food. Contemporary versions range from intensely roasted whole-seed pastes to nearly white, exceptionally smooth products. Despite these changes, the governing technique remains the same: sesame is reduced until its abundant natural oil carries the ground solids, preserving an old relationship between seed agriculture, milling and sauce making.

Historical context

The eastern Mediterranean was divided among competing powers while remaining connected by Arabic as a major language of scholarship and commerce. Ayyubid rule linked Egypt and much of Syria, and ports such as Alexandria and Acre connected inland markets with Mediterranean shipping. Cairo was among the world's largest cities, while the Crusader states still controlled parts of the Levantine coast. Cookbooks compiled for prosperous urban and courtly households recorded elaborate techniques that ordinary cooks may also have used in simpler forms. Sesame, suited to warm growing conditions and valued for both seed and oil, moved through regional agricultural and commercial networks.
