Teff is not a finished dish but a cereal crop, Eragrostis tef, indigenous to northeastern Africa and most strongly associated with Ethiopia and Eritrea. Its exceptionally small grains are commonly milled whole because separating bran and germ is impractical. That characteristic helps distinguish teff flour nutritionally and technically from highly refined wheat flour, but it also makes ancient teff difficult to find: grains can pass through coarse archaeological screens, while charring may distort or destroy them.

The Ethiopian highlands are widely regarded as the crop’s center of domestication, supported by its diversity, regional distribution, and relationship to local wild grasses. The precise date remains unresolved. Assigning domesticated teff specifically to about 1000 BCE is a plausible broad reconstruction rather than a securely demonstrated event. Archaeobotanical recovery in the region is uneven, and later evidence for teff’s importance cannot by itself prove that it was already the principal grain at this date.

Traditional cultivation begins with intensive preparation of a fine seedbed. Farmers broadcast the minute seed, sometimes growing different varieties suited to local soils, elevations, rainfall, or culinary preferences. Mature plants are cut, bundled, dried, and threshed, after which repeated winnowing and sieving remove straw, dust, and grit. Teff can be prepared as porridge or unleavened foods, but its most famous use is flour fermented for injera. In this process, flour and water form a batter maintained by microbial fermentation; a portion of fermented batter may be cooked into a thickening agent and returned to improve texture. The batter is then poured in a spiral onto a hot clay or metal surface and covered briefly, producing a soft, sour flatbread with a porous upper face.

It is not defensible to project that complete modern injera method unchanged into 1000 BCE. Griddle breads and fermented cereals are old technologies, yet the first appearance and evolution of specifically teff-based injera are not securely dated. Moreover, injera may contain teff alone or mixtures with barley, wheat, sorghum, maize, or other grains according to period, region, price, and availability. Maize entered African food systems only after transatlantic contact and therefore cannot belong to an Iron Age reconstruction.

Teff later became central to highland meals because injera serves simultaneously as bread, plate, and eating utensil for stews and sauces. Today the crop is also sold internationally as a gluten-free whole grain. Modern milling, urban distribution, improved cultivars, and electric griddles have changed its production and preparation, while fermentation, shared platters, and regional preferences preserve a distinctly Ethiopian and Eritrean food tradition.

Historical context

Communities in the northern Ethiopian and Eritrean highlands practiced mixed farming in landscapes divided by steep escarpments and major elevation changes. Cattle, sheep, goats, and cereals supported increasingly settled populations, while Red Sea routes connected northeastern Africa with Arabia and wider exchange networks. The political formations that preceded the kingdom of Aksum were still developing, and the chronology and scale of South Arabian influence remain debated. Iron technology was present in parts of Africa but was not adopted everywhere at the same time. Highland soils and seasonal rains favored diverse local farming strategies rather than a single uniform crop system.
