Thandai is a North Indian milk drink flavored with a ground mixture of nuts, seeds, spices, flowers, and sugar. Its name is related to the Hindustani word for cold or cooling, and the drink is normally served chilled. It is especially associated with Holi, the spring festival of colors, and with Mahashivaratri. During these observances it may function as refreshment, an offering, or a gesture of hospitality amid increasingly warm weather.

A common modern preparation begins by soaking almonds and ingredients such as melon or watermelon seeds, poppy seeds, fennel, black pepper, and cardamom. These are ground into a paste, sometimes with rose petals, saffron, or other aromatics. The paste is mixed with milk and sugar, strained to remove coarse particles, chilled, and poured into cups or glasses. Recipes vary substantially by household, region, cost, and occasion. Cashews, pistachios, cucumber seeds, or prepared rose products may appear, while expensive saffron may be omitted. The resulting drink can be creamy and mildly nutty, with pepper and fennel preventing it from tasting simply like sweetened milk.

One important distinction concerns bhang. Some festive thandai contains a preparation made from cannabis leaves, particularly in contexts connected with Shiva. Many servings contain no cannabis at all, however, and ordinary thandai should not automatically be called bhang thandai. Where cannabis is used, its legal status, potency, and social meaning vary, and intoxication is part of the drink’s effect rather than an incidental flavoring.

Their prior availability makes an early-modern version plausible, but it does not prove that a standardized drink bearing the modern name and festival associations already existed in exactly its present form. Traditional production demanded time: ingredients had to be selected, soaked, hand-ground, diluted, and repeatedly strained. That labor helped make thandai suitable for collective preparation and festive service. In contemporary India, households and vendors still prepare fresh versions, while bottled concentrates and dry mixes reduce the process to combining syrup or powder with milk. Refrigeration, packaged milk, electric grinders, and commercial flavorings have made the drink easier to serve beyond festivals and outside North India. Despite these changes, its defining structure remains recognizable: cold milk carrying the flavors of ground nuts, seeds, warming spices, flowers, and sweetness.

Historical context

Much of North India lay within the Mughal imperial sphere, although political authority would fragment during the eighteenth century. Large cities and courtly centers supported markets for milk, refined sugar, nuts, saffron, rose products, and imported or long-distance spices. River routes and overland trade connected the Gangetic plain with Kashmir, Central Asia, western Indian ports, and producing regions farther south. Most food production nevertheless remained agrarian and seasonal, while cooling drinks depended on laborious grinding, access to clean water and milk, and, where genuinely chilled, costly ice or evaporative cooling rather than mechanical refrigeration.
