Historical context
Much of North India lay within the Mughal imperial sphere, although political authority would fragment during the eighteenth century. Large cities and courtly centers supported markets for milk, refined sugar, nuts, saffron, rose products, and imported or long-distance spices. River routes and overland trade connected the Gangetic plain with Kashmir, Central Asia, western Indian ports, and producing regions farther south. Most food production nevertheless remained agrarian and seasonal, while cooling drinks depended on laborious grinding, access to clean water and milk, and, where genuinely chilled, costly ice or evaporative cooling rather than mechanical refrigeration.
