Wakame

Wakame is an edible brown seaweed, usually identified today as Undaria pinnatifida. Rather than a composed dish, it is an ingredient eaten fresh, salted or dried and then incorporated into soups, broths, salads and seasoned side dishes. Its broad, undulating blades grow attached to submerged rock in cool coastal water. Harvesters traditionally cut or gathered the fronds, washed away sand and marine organisms, and preserved the short-lived crop by drying or salting.

Early Japanese written culture provides evidence that edible seaweeds were recognized as valuable coastal products. The administrative system established around the beginning of the eighth century required provinces to deliver taxes and tribute in regional commodities, including marine foods. Later legal compilations and court records name several seaweeds and show that dried products moved from coastal districts toward political and religious centers. Translating ancient plant names into modern species is not always secure, however. Some references conventionally interpreted as wakame may designate a broader class of edible seaweed rather than Undaria pinnatifida alone.

Drying was crucial to this movement. Fresh seaweed deteriorates rapidly, but removing most of its water made it lighter, less perishable and practical to bundle for storage and inland transport. Before eating, dried wakame could be soaked briefly, causing the folded tissue to expand, and then simmered in soup or served with seasonings. Historical recipes are much better documented in later periods than around 700, so particular early preparations should be treated as reasonable reconstruction rather than direct evidence.

On the Korean peninsula, the same species is generally known as miyeok. Miyeok-guk, a soup commonly made with rehydrated seaweed, broth and often beef or seafood, is strongly associated today with childbirth recovery and birthdays. The custom reflects the food’s perceived restorative value and the remembrance of maternal care. Its antiquity is often asserted, but surviving evidence does not securely establish the complete modern postpartum ritual as early as 700. Japanese wakame and Korean miyeok therefore share a species and overlapping preservation techniques without being interchangeable cultural traditions.

Modern production includes coastal gathering and large-scale aquaculture. Commercial processors may blanch wakame, which turns it bright green, before salting, freezing or drying it; these methods differ from simple historical sun-drying. The seaweed now travels globally and appears in miso soup, dressed salads and packaged foods. Its nutritional reputation rests partly on minerals, especially iodine, but concentrations vary greatly with growing water and processing. Wakame’s enduring significance lies less in a single origin moment than in the durable coastal knowledge that converted a seasonal marine plant into a storable, tradable and versatile food.

Historical context

Japan’s Yamato court was consolidating a centralized state modeled partly on Tang Chinese institutions. The Taihō legal code was promulgated in 701, and the capital moved to Heijō-kyō, present-day Nara, in 710. Provincial taxation drew rice, textiles and regional specialties toward the court, making dried marine products especially useful because they could survive journeys of hundreds of kilometers. Unified Silla governed most of the Korean peninsula, while maritime routes across the Korea Strait carried officials, monks, technologies and commodities between Korea, Japan and the wider East Asian world.
