Yerba mate is an infusion made from the dried leaves and small stems of Ilex paraguariensis, a caffeinated evergreen native to subtropical South America. Guaraní and neighboring Indigenous peoples used the plant before European colonization, although the exact antiquity, preparation methods, and geographical extent of precontact consumption remain incompletely documented. Sixteenth-century colonial testimony provides clearer evidence that prepared leaf was already being consumed and exchanged in the Paraná–Paraguay region. The year 1550 is therefore best understood as an approximate documentary marker, not the beverage’s invention.
The drink is prepared by placing processed yerba in a small vessel—also called a mate—adding water, and drawing the infusion through a filtered tube known in Spanish as a bombilla. Water is traditionally hot but not boiling; repeated pours extract flavor and caffeine from the same leaves. Drinking may be individual, but the best-known social form passes one vessel around a group while a designated server refills it. This practice makes mate simultaneously a stimulant, an act of hospitality, and a ritual of conversation. Production required more than simply gathering leaves. Harvested material was heated soon after cutting, traditionally near fire, to halt enzymatic deterioration; it was then dried, broken or milled, and often rested before use. As demand expanded, merchants moved yerba along rivers and overland routes into distant parts of Spanish South America. Harvesting from forest stands could involve severe labor exploitation, especially where colonial authorities and traders compelled Indigenous workers to travel and work under dangerous conditions.
During the seventeenth and early eighteenth centuries, Jesuit missions developed successful cultivation within their settlements, supplementing collection from wild trees and organizing production on a larger scale. Their estates did not originate mate, but they helped turn it into a major colonial commodity. After the Jesuits’ expulsion, plantation knowledge and production systems were disrupted, while forest gathering and commercial competition continued.
Modern yerba is generally cultivated, mechanically dried, milled into regional grades, packaged, and sold in forms ranging from stem-rich blends to fine powders. It may be drunk hot, cold as tereré, or brewed and strained as mate cocido. Sugar, herbs, citrus, and milk are optional additions rather than defining ingredients. Across Paraguay, Argentina, Uruguay, southern Brazil, and neighboring areas, mate remains a daily beverage and a powerful expression of regional identity. Its history joins enduring Indigenous knowledge to colonial trade, coerced labor, plantation agriculture, and modern mass consumption.

Historical context
Iberian colonization was advancing through the Río de la Plata and Paraguay despite small, scattered European settlements and persistent dependence on Indigenous food, labor, transport, and geographical knowledge. Asunción, founded in 1537, became a colonial base connected to the Paraná and Paraguay river systems. Across the Atlantic world, American maize, cassava, potatoes, and tobacco were beginning long-distance transfers, while horses, cattle, sugar, and new diseases were transforming American environments. Yerba mate, unlike globally transplanted crops, initially remained a regional commodity carried through extensive inland South American trade routes.
