Historical context

Manila was the capital of the Spanish Philippines and a major node in the galleon trade linking Southeast Asia, Mexico, and ultimately Europe. Chinese merchants and artisans formed an important part of the city’s commercial world, while regional vessels moved foods and techniques among island and mainland ports. Domestic ducks and egg incubation were not products of Atlantic contact, although American chiles were spreading rapidly through Asian trade networks.
