Çatalhöyük Cattle-Horn Feast

Reconstruction

Between about 7000 and 6500 BCE, people living at Çatalhöyük sometimes transformed cattle from hunted animals into food, architecture, and social memory. This card represents a reconstructed type of event rather than one uniquely identified banquet. Excavators have found deposits containing unusually large pieces of cattle bone, sometimes concentrated rapidly and associated with house abandonment, rebuilding, or other special treatment. Elsewhere in the settlement, cattle skulls, horn cores, and horns were embedded in plastered walls, benches, and pillars. Together, these remains support repeated links among cattle consumption, commemoration, and household display.

The animals involved during this period were principally wild aurochs, not ordinary domestic cattle. Measurements and mortality profiles place the cattle from Çatalhöyük’s approximately 7000–6500 BCE phase within the wild range, while some feasting and special deposits preferentially contain large animals, probably including mature males. Hunting an aurochs would have been dangerous and labor-intensive. Its carcass also yielded more meat than a small household could readily consume fresh, making distribution among a larger gathering a reasonable archaeological reconstruction.

The most defensible menu is therefore aurochs meat and marrow, sometimes accompanied in feasting deposits by sheep or goat. Large bones were commonly broken open for marrow but were not always pulverized as thoroughly as bones in ordinary refuse, where intensive processing for grease or broth was more frequent. Cut marks document skinning, dismemberment, filleting, and carving across the site, but no complete feast recipe survives. Meat may sometimes have been cooked on the bone by roasting or baking, yet the preparation of any particular cattle feast remains uncertain. Çatalhöyük’s inhabitants also ate wheat, barley, peas, lentils, fruits, and nuts, but assigning specific plant dishes to a cattle feast would exceed the direct evidence.

After consumption, selected remains could acquire a second life. Horns and skull portions were curated, plastered, installed prominently, concealed in commemorative deposits, or incorporated into rebuilt houses. These practices joined memorable animals and events to buildings that also contained ovens, stores, work areas, and human burials. The installations may have advertised a household’s hunting success, hospitality, ancestry, or prestige, although no single explanation accounts for every deposit. Claims that they straightforwardly represent bull worship or exclusively male power remain interpretive.

Cattle were not the community’s principal everyday protein source; sheep and goats were much more common in the faunal assemblage. Aurochs mattered disproportionately because they were rare, formidable, and symbolically charged. No direct line connects these gatherings to a modern Turkish dish. Their defensible modern relevance lies instead in a persistent social feature of feasting: exceptional foods can gather communities, display generosity, and preserve the memory of an occasion long after the meal has disappeared.

Historical context

Çatalhöyük was expanding into one of Southwest Asia’s largest early farming settlements. Its densely packed mud-brick houses were commonly entered from the roof and repeatedly rebuilt on earlier foundations. Middle-period population estimates range from roughly 3,500 to 8,000 people. Residents cultivated wheat, barley, peas, and lentils, herded sheep and goats, hunted wild animals, and obtained Cappadocian obsidian over distances exceeding 100 kilometers. Domestic cattle were spreading through parts of Anatolia, but the cattle used at Çatalhöyük during approximately 7000–6500 BCE remained morphologically wild aurochs.

Evidence

Archaeological

StrongExcavated houses contain cattle horn cores, skull portions, bucrania, and other animal parts embedded in plastered architectural installations or placed in structured deposits.

Zooarchaeological

StrongIdentified cattle remains include large bone fragments, concentrated body parts, marrow fractures, and occasional butchery marks. Feasting and special deposits show selection for large cattle, probably including mature males.

Food identification

StrongThe bones and horn cores are securely identified as cattle. Metrical and mortality evidence indicates that cattle in the approximately 7000–6500 BCE phase were wild aurochs rather than a locally domesticated herd.

Dating

ModerateThe proposed range corresponds to a recognized faunal phase of approximately 7000–6500 cal BCE. Individual installations and deposits belong to different buildings and episodes, so the card does not represent a single directly dated feast.

Preparation method

LimitedFresh-bone breakage supports marrow extraction, and cut marks elsewhere document butchery and carving. Roasting or baking is plausible for some meat, but the cooking method of a specific cattle feast is not directly established.

Geographic attribution

StrongThe deposits and installations derive from the Neolithic East Mound at Çatalhöyük on the Konya Plain of central Anatolia.

Historical interpretation

ProbableLarge, rapidly deposited bones from cattle and other animals, their contrast with fragmented household refuse, and their association with special deposits support supra-household feasting. The participants, occasion, and precise ritual meaning remain unknown.

Visual reconstruction

InterpretiveA scene combining hunters, assembled diners, prepared aurochs meat, and newly installed horns would synthesize evidence from multiple contexts rather than reproduce one directly observed event.
