Reconstruction
Grotta Scaloria is better understood as a repeatedly used ritual and domestic complex than as the remains of one securely identified banquet. During its most intensive Neolithic use, approximately 5600–5200 BCE, people entered a limestone cave near the meeting point of Apulia’s Tavoliere Plain and Gargano peninsula. They cooked, ate, tended livestock, deposited human remains and carried pottery into chambers where dripping water acquired special importance. These activities may have included communal feasting, but the scale, participants and relationship between individual meals and ceremonies cannot be reconstructed directly.
The most striking evidence comes from the difficult-to-reach Lower Chamber. More than forty pottery vessels were found fixed within or beneath mineral formations, apparently positioned to catch water dripping from stalactites. A rectangular basin cut into the cave floor collected the same slow flow. A large hearth and vessels near the basin show that fire and food-related activity occurred in this area, although they do not prove that every vessel or meal belonged to one coordinated ceremony.
The more accessible Upper Chamber presents an equally complex record. Archaeologists recovered pottery, stone tools, cooking installations and abundant animal bones. Of 2,135 identifiable Neolithic animal specimens in a published legacy assemblage, about 81 percent belonged to domestic animals. Sheep and goats overwhelmingly dominated, while cattle and pigs were also present. Wild resources included roe, red and fallow deer, hare, tortoise, fish and other animals. Much of this material was interpreted as food refuse, but the assemblage accumulated over time rather than representing a single menu.
Hearths and sedimentary evidence confirm cooking, while microscopic analysis indicates that dung was burned with wood and grass. Whether meat was roasted, boiled in ceramic vessels or prepared by several methods remains unknown. Human isotope results suggest diets dominated by terrestrial C3 plant foods, probably including the wheat and barley cultivated across Neolithic southern Italy, with comparatively modest animal-protein consumption. Specific cereal dishes have not, however, been identified directly at the cave.
Scaloria also received the remains of at least two dozen people. Some bones were systematically cleaned and disarticulated before deposition, indicating secondary mortuary rites rather than cannibalism. Strontium isotope variation is consistent with people drawn from more than one community in the surrounding settlement network, supporting—but not proving—the interpretation of Scaloria as a regional gathering place.
Its food history therefore lies not in a recoverable recipe but in the combination of livestock, cooking, pottery, water collection and collective ritual. Those agricultural foundations remain recognizable in later Apulian foodways, yet no continuous line connects the cave’s meals to a particular modern feast or dish.
Historical context
The Tavoliere was one of Neolithic Europe’s most densely occupied archaeological landscapes. Nearly 1,000 ditched settlement sites have been identified there, although they were not all inhabited simultaneously. Communities cultivated cereals and legumes, managed sheep, goats, cattle and pigs, and participated in exchange networks extending across southern Italy and the Adriatic. Scaloria stood near the coastal plain but isotope evidence indicates little marine protein in the diets of the people deposited there.
