Reconstruction
Between about 7000 and 6600 BCE, Jiahu was a permanent village in the upper Huai River region of present-day Henan. No text names a celebration there, and archaeology has not preserved one identifiable drinking occasion. The gathering represented by this card is therefore a reasonable reconstruction: inhabitants sharing a beverage whose production is directly supported by residues in Jiahu pottery, placed within a community that also created cemeteries, musical instruments and other objects interpreted as ritual equipment.
Researchers chemically analyzed sherds from sixteen Jiahu vessels, including narrow-mouthed jars, basins and other forms suitable for handling liquids. Thirteen produced closely related residue signatures. Comparisons using infrared spectroscopy, chromatography, mass spectrometry and stable-isotope analysis supported a mixture of rice, honey and tartaric-acid-bearing fruit, most plausibly hawthorn fruit, wild grape or both. Beeswax-related compounds support the presence of honey. Ethanol itself did not survive, but the ingredients and vessel evidence make fermentation the investigators’ most straightforward interpretation.
Exactly how Jiahu brewers converted rice starch into fermentable sugar remains unknown. Honey and crushed fruit could provide sugars and naturally occurring yeasts, while the rice might have been cooked or otherwise processed. Malting or mastication has been proposed, but neither is directly demonstrated, and there is no evidence here for the mold starters documented at some later Chinese sites. The resulting drink was probably cloudy and perishable rather than equivalent to modern filtered rice wine. Its strength, sweetness, proportions and fermentation time cannot be recovered.
Jiahu’s inhabitants did not live by rice alone. Archaeobotanical and faunal remains indicate a mixed economy in which fishing, hunting and gathering remained central. Acorns, water chestnuts, lotus, wild soybean, fish and shellfish were important, while cultivated rice was probably a supplementary resource. Any claim that these foods formed a particular feast menu would be speculative. Nevertheless, using rice and honey in a fermented drink may indicate that valued ingredients and labor were sometimes redirected from ordinary consumption into socially significant hospitality.
The beverage matters because it provides unusually early chemical evidence for intentional fermentation in East Asia. Jiahu’s burials, crane-bone flutes and differentiated grave goods show that food and drink existed within an increasingly organized social world, although they do not prove that music, burial and drinking occurred together. Later Chinese brewers developed specialized cereal saccharification with qu molds and produced rice and millet wines in very different societies. Those traditions should not be treated as an unbroken Jiahu recipe, but Jiahu demonstrates that combining local grain, fruit and honey through fermentation had already begun nine millennia ago.
Historical context
Jiahu occupied roughly 5–5.5 hectares in a riverine landscape linking the Yellow and Yangtze drainage systems. It was an organized, year-round settlement with houses, storage pits, workshops, pottery kilns and cemeteries, but not a city or state. Across China, sedentary communities were emerging while cultivation developed gradually alongside fishing, hunting and gathering; domesticated cereals had not yet displaced wild resources in most diets. Jiahu’s first phase belonged to this transition. Pottery was already an established technology, while writing, bronze metallurgy and dynastic government remained thousands of years in the future. Communities elsewhere in Southwest Asia were also cultivating cereals and keeping livestock, but no evidence demonstrates contact between them and Jiahu.

Archaeological

Residue chemical
ModerateFT-IR, HPLC, GC-MS and isotopic analyses found recurring residue patterns consistent with rice, honey and tartaric-acid-bearing fruit. Ethanol was not preserved, so fermentation is a well-supported interpretation rather than direct detection of alcohol.
Food identification
ModerateRice and honey are supported by converging chemical and archaeological evidence. The fruit cannot be resolved more narrowly than likely hawthorn fruit, wild grape or a combination, and alternative minor sources of tartaric acid cannot be entirely excluded.
Dating
StrongRadiocarbon dating and stratigraphic analysis place Jiahu's earliest phase at approximately 7000–6600 BCE and the full occupation sequence at roughly 7000–5800/5700 BCE.
