Chikwangue is a dense, elastic loaf made from fermented cassava paste and cooked inside leaves. It is eaten across parts of the Congo Basin, where related forms and names include kwanga. Rather than being a dish with a securely documented invention date, it is best understood as a regional technology for making cassava safer, more portable, and more agreeable to eat. Cassava itself came from tropical South America. Portions are tightly enclosed in one or more layers of food-safe leaves, then boiled, steamed, or otherwise cooked with moist heat. Fermentation contributes sour aromas and changes texture, while soaking, pressing, and heating together reduce cyanogenic potential. No single step should be assumed to make poorly processed cassava safe.

Historical context

The world population was approaching one billion, Atlantic commerce was intensifying, and the forced movement of Africans remained central to the Atlantic economy. Cassava, carried from South America to Africa through Portuguese-connected exchange beginning centuries earlier, was already established in many parts of west-central Africa.
