Rakfisk is a Norwegian preparation of salted, fermented freshwater fish, most commonly trout and sometimes char. Details—including salt concentration, whether sugar or brine was added, maturation time, and the handling of blood and viscera—varied among households and regions. These later documented methods should not automatically be projected unchanged into the fourteenth century.
Rakfisk became especially associated with inland districts such as Valdres, where freshwater fisheries, farm storage, and winter food customs supported its continued production. It was generally not an everyday medieval food with a single fixed recipe, but one expression of a larger northern repertoire of salting, drying, souring, and fermenting fish. Preservation reduced dependence on an immediate catch and converted a perishable source of protein and fat into food that could be stored and shared during the cold season.
Modern rakfisk is commonly served in thin pieces with lefse or flatbread, boiled potatoes, onion, sour cream, and sometimes mustard, accompanied by beer or aquavit. These accompaniments represent the modern serving tradition rather than a securely documented medieval plate. Commercial producers now use refrigerated maturation, measured salt levels, hygienic processing, sealed packaging, and microbiological controls. Such safeguards matter because improperly produced raw fermented fish can support dangerous pathogens, including the organism responsible for botulism.
Rakfisk therefore survives not as an unchanged medieval recipe but as a living preservation tradition. Its continuity lies chiefly in the controlled transformation of salted freshwater fish and in its role as a distinctive winter food, while present-day regulation and cold-chain distribution have substantially changed how safely and widely it can be made and sold.

Historical context
Norway was a sparsely populated kingdom whose farms and settlements were distributed along coasts, fjords, and inland valleys. Fish was central to subsistence and commerce, while imported salt connected local preservation to wider North Sea and Baltic trading networks. Bergen was an important northern trading port increasingly tied to Hanseatic merchants.
