Shidal is a fermented fish product and cooking ingredient rather than one fixed, plated recipe. It belongs to food traditions shared across parts of northeastern India and Bangladesh, particularly communities connected with the Barak and Surma river systems. Spellings and local names vary, while closely related products are not always made identically. Its precise date of origin is undocumented; 1900 is better understood as a reference point for an already established household practice than as an invention date.

Producers traditionally begin with small freshwater fish, especially small barbs such as the pool barb, although species can vary with local catches. The fish are cleaned to differing degrees and sun-dried, reducing the water available to spoilage organisms. They are then tightly packed into earthen vessels, which may be prepared or coated with oil, and sealed to restrict air and contamination. Fermentation and enzymatic breakdown continue for several months. Salt may be used in some versions, but low-salt or unsalted preparation is an important distinction between shidal and many heavily salted Asian fish pastes.

During maturation, proteins and fats break down into compounds that create shidal’s forceful aroma, softened texture, and intense savory taste. The process historically converted a seasonal, perishable catch into food that could be stored and carried beyond the fishing period. Outcomes depended on weather, drying, vessel cleanliness, fish condition, and the integrity of the seal. Traditional knowledge governed these variables without laboratory starter cultures, but not every batch was safe or successful.

Shidal is generally used sparingly. It may be mashed into a pungent chutney or cooked with chillies, onions, garlic, herbs, potatoes, leafy vegetables, or other produce. Frying or simmering disperses its flavor through a larger dish. Recipes differ among Bengali-speaking, Tripuri, Manipuri, and other communities, and local fermented fish terms should not automatically be treated as synonyms for precisely the same product.

Its significance lies partly in economy: small fish, including bones and viscera where retained, could supply protein and micronutrients while strongly seasoning otherwise modest meals. It also preserves a recognizable regional taste. Aroma carries social meaning here; what an unfamiliar diner may perceive as overpowering can signal appetite, home, and continuity to an accustomed household.

Modern production has introduced improved drying surfaces, sanitation, moisture control, sealed packaging, and microbiological study. Some commercial products are more standardized than household batches, although uncontrolled processing and adulteration remain possible concerns. Refrigeration can now preserve fresh fish, but shidal survives because fermentation does more than prevent loss: it creates a flavor that fresh or simply dried fish cannot reproduce. Its continuing use demonstrates how an old preservation practice can remain culturally valuable after the original storage necessity has diminished.

Historical context

Present-day Bangladesh and much of northeastern India were governed within British India, while Assam and Bengal were being tied more closely to river steamers, railways, and expanding commodity markets. Most households still lacked mechanical refrigeration, making drying, salting, smoking, and fermentation essential tools for managing seasonal fish catches. Dense river networks supported extensive inland fisheries, but monsoon humidity made reliable drying difficult and increased the value of carefully sealed preservation vessels.
