Reconstruction
The Great Famine conventionally named for 1315–1317 began with exceptionally wet growing seasons. Heavy rain had developed by 1314 and continued through much of 1316, saturating soils, flooding low ground and preventing grain from ripening or being harvested in good condition. Tree-ring-based climate reconstruction confirms extraordinary wetness across a broad zone extending from the British Isles and France through Germany and the Low Countries toward Poland and the Baltic. The resulting crisis was not one simultaneous, uniform disaster, but a succession of regional harvest failures, shortages and epidemics.
Bread stood at the center of the northern European food system. Wheat was preferred in many English towns and wealthier households, while rye, mixed wheat-and-rye maslin, barley and oats were important according to region and social status. Peas and beans supplied both people and livestock. A contemporary English account reports that wheat, beans, peas, barley, oats and salt became extremely expensive; meat, eggs and poultry were difficult to obtain. It also describes immature, rain-damaged grain being placed in vessels to dry before it could be milled and baked. The resulting bread was regarded as poor and unsatisfying.
Households adapted by consuming coarser grains and more boiled cereal or legume preparations where supplies remained available. These were established foods rather than newly invented famine dishes. Evidence for particular emergency recipes is weak, and later stories of extreme famine foods or cannibalism should not be generalized across the affected region. Many families instead reduced portions, sold possessions or land, exhausted stored grain, and struggled to retain seed and fodder. When animal feed became unaffordable or unusable, supplies of pork, poultry, eggs and dairy products also contracted.
The poor, landless wage earners and smallholders were most exposed because rising prices destroyed their purchasing power. Even better-provisioned institutions encountered shortages: an English chronicler reported difficulty finding enough bread for Edward II’s household at St Albans in August 1315. Hunger and weakened resistance to infection acted together, but surviving records do not permit a single reliable mortality total for northern Europe.
The harvest situation improved in many places during 1317, yet depleted seed, livestock and household reserves prolonged hardship into 1321 or 1322. A trans-European cattle panzootic compounded recovery, although its chronology varied and its English peak came after the canonical famine years. Governments experimented with price controls, grain-export restrictions and pressure on holders to release supplies—measures that became recurring features of later scarcity policy. No modern dish can be traced specifically to the famine. Its defensible modern relevance instead lies in showing how consecutive climate shocks, low reserves, animal disease, war and unequal access to markets can turn failed harvests into a food-system catastrophe.
Historical context
Northern Europe was near a medieval demographic and agricultural high point: dense settlement had pushed cultivation onto some comparatively marginal land, while towns and regional grain markets had expanded without possessing modern storage, transport or emergency-relief capacity. The papal court had moved to Avignon in 1309, and wars in the British Isles and elsewhere interfered with production and distribution. Climate reconstruction identifies 1314–1316 as the fifth-wettest three-year European summer interval between 1300 and 2012. The Black Death was still more than thirty years away, making this famine the first major population crisis of Europe’s calamitous fourteenth century.

Limitations

1317 is the conventional endpoint in the event's name and marks improving harvest conditions in many areas, but stronger scholarship treats the wider famine and agrarian crisis as continuing regionally until 1321 or 1322.
