Reconstruction
Abu Hureyra, on a terrace above the Euphrates in northern Syria, preserves an unusually long record of the transition from foraging to farming. Its inhabitants did not abandon hunting and gathering in a single agricultural revolution. Instead, the excavated sequence shows overlapping changes in settlement, crops, animals, labor, and food preparation. An Epipalaeolithic community had already lived there before a much larger Pre-Pottery Neolithic settlement appeared around 8600 BCE. Rectilinear mudbrick houses, plaster floors, storage facilities, and eventually a settlement covering roughly eight to eleven hectares accompanied the new economy.
Charred plant remains from the Neolithic levels include domesticated or domestic-type rye, einkorn and emmer wheat, bread wheat, and two- and six-row barley. Lentils, peas, vetches, field beans, and chickpeas broadened the cultivated food supply. Wild plants did not immediately disappear: small-seeded grasses, legumes, fruits, and other gathered resources continued to enter the settlement. Some seeds found in archaeological deposits may have arrived in animal dung burned as fuel rather than as human food, so individual species cannot automatically be treated as menu items.
Harvested cereals would have required cutting, threshing, cleaning, storage, and repeated grinding. Querns and human skeletal wear support labor-intensive grain processing, with patterns on some female skeletons interpreted as evidence that women performed much of the repetitive kneeling and grinding. Dental microwear also changed with the increasing consumption of large-grained cereals. No named recipe survives, and direct evidence does not establish whether a particular grain became bread, porridge, gruel, or another preparation. Ground, cracked, parched, and boiled foods are reasonable possibilities, but they remain reconstructions rather than observed dishes.
Animal use changed just as gradually. Gazelle remained the dominant meat source during early Neolithic phase 2A even as sheep and goats became more visible. Dung spherulites suggest that people may have tended small numbers of live animals before large-scale herding, although identifying the earliest managed species remains partly inferential. Between approximately 7465 and 7175 BCE, managed sheep and goats replaced gazelle as the principal animals in the faunal assemblage. Cattle were also exploited, while pigs, onagers, and fallow deer became less important or rare.
Abu Hureyra therefore documents not a sudden replacement of wild food but a long reorganization of subsistence. Reliable crops reduced dependence on naturally occurring stands while herds converted vegetation into meat and other resources. Storage, grinding, dung use, and permanent architecture tied food production to household and village labor. Wheat, barley, pulses, sheep, and goats remain central to West Asian food systems today, but no uninterrupted lineage connects Abu Hureyra to any specific modern Syrian dish. The defensible continuity lies instead in the enduring agricultural combination of cereals, legumes, and managed livestock.
Historical context
The Younger Dryas cold interval had ended and early Holocene conditions were reshaping vegetation and water availability across Southwest Asia. Communities from the Jordan Valley to the Upper Euphrates were experimenting with cultivation, permanent buildings, storage, and animal management. Abu Hureyra's Neolithic settlement expanded from roughly eight to eleven hectares, making it unusually large for the period. Pottery was absent through much of this transition, so food was stored or processed using baskets, stone implements, plaster containers, skins, and other perishable vessels. Exchange networks already carried materials such as Anatolian obsidian across hundreds of kilometers.

Archaeological

StrongAnimal bones directly document prolonged gazelle hunting followed by increasing caprine exploitation and an eventual shift toward sheep and goat herding. The precise onset of management preceded clear morphological domestication markers and is less certain.
Residue chemical
ModerateMicroscopic dung spherulites occur in curated sediments and support dung burning, use in plaster, and the presence or tending of animals near the settlement. Assigning the earliest dung to a particular animal species is inferential.
Food identification
