Reconstruction
Akrotiri’s last occupied rooms preserve an unusually close view of food in a Bronze Age Aegean town. Earthquakes apparently prompted inhabitants to leave before Thera’s catastrophic eruption buried the settlement beneath pumice and ash. The evacuation removed people and many portable valuables, but buildings, storage vessels, cooking equipment, furnishings, and food remains stayed behind. Their sealed contexts make Akrotiri exceptional: rather than a generalized list of regional crops, archaeologists can examine ingredients within particular houses and work areas.
Plant remains show that cereals and pulses were fundamental. Barley and wheat occur not only as grains but as ground material, demonstrating that some crops had already been reduced to flour. Probable legume flour was also identified, although it cannot always be assigned confidently to a species. West House deposits and wider site studies document pulses including lentils, peas, and probable grass pea, alongside dried figs, grapes, and olives. These remains represent stored foods and stages of processing, not a surviving menu, so specific breads, porridges, or pulse stews remain reasonable reconstructions rather than directly observed recipes.
Food preparation involved a substantial ceramic technology. Akrotiri has produced cooking vessels from successive periods, including locally manufactured wares and some imports from other Cycladic islands. Vessel fabrics, shapes, heat performance, and evidence of use indicate deliberate choices suited to cooking over heat. Installations and utensils supported grinding, crushing, roasting, boiling, storage, serving, and drinking, though archaeologists cannot match every vessel form to a single food. Large containers and carefully organized storerooms reveal household planning for foods that could bridge seasons or supply gatherings.
The sea also entered the town’s food system. Fish bones, shells, fishing equipment, and the famous images of young fishermen attest to sustained engagement with marine resources, although pictures cannot by themselves measure everyday consumption. One small vessel held desiccated remains interpreted as a prepared fish product containing several small fish, small rays, cereal seeds, and possibly unidentified seasonings. Comparison with later Mediterranean fish pastes is informative, but fermentation and a direct connection to Roman alec or garum have not been demonstrated.
Akrotiri’s food evidence also reflects its position in maritime networks. The approximately 20-hectare settlement had multistoreyed buildings, drainage, elaborate wall paintings, and imported objects linking it with Crete, mainland Greece, the Dodecanese, Cyprus, the Levant, and Egypt. Imported pottery does not prove that every ingredient traveled equally far, but it shows that cooking and consumption occurred in a socially and commercially connected port.
Modern Santorini still associates its identity with grapes, dried produce, seafood, and a purée called fava made from Lathyrus clymenum. Akrotiri provides ancient evidence for related crops, including probable Lathyrus, but uninterrupted cultivation and an unchanged recipe cannot be proven. The defensible continuity is at the level of island-adapted ingredients, storage, and pulse processing—not a single dish preserved unchanged for 3,600 years.
Historical context
Akrotiri was a substantial Aegean port, conventionally estimated at about 20 hectares, within a maritime world dominated by palatial Crete and expanding exchange among the Cyclades, mainland Greece, Cyprus, Anatolia, the Levant, and Egypt. Ships could move pottery, metals, luxury materials, crops, and culinary practices across hundreds of kilometers. Depending on the still-disputed absolute date of the eruption, Akrotiri’s final phase overlapped either the later Second Intermediate Period or the transition toward the New Kingdom in Egypt. Its multistoreyed masonry buildings, drainage system, specialized ceramics, and storerooms belonged to an increasingly urban and technically sophisticated eastern Mediterranean.
