Reconstruction

On the banks of the Melendiz River in volcanic Cappadocia, generations of people built, occupied, demolished, and rebuilt Aşıklı Höyük for roughly a millennium. Current radiocarbon-based estimates place its main sedentary occupation around 8350–7300 BCE. The settlement therefore preserves an unusually detailed record of communities learning to maintain permanent homes, cultivated plants, and managed animals without abandoning hunting and gathering at once.

The built environment changed substantially. Early residents occupied oval or circular semi-subterranean structures made with sun-dried mudbrick. These contained plastered floors, hearths, grinding stones, platforms, and sometimes burials beneath the floor. Around the beginning of the eighth millennium BCE, above-ground rectangular buildings became common. Repeated construction in the same locations produced increasingly dense groups of rooms and buildings. Archaeologists identify activity areas and possible household groupings from hearths, installations, artifacts, and spatial relationships, but individual buildings should not automatically be equated with modern nuclear-family homes.

Charred plant remains provide direct evidence of food resources. They include einkorn and emmer wheat, a free-threshing wheat, hulled and naked barley, lentils, bitter vetch, and probable peas. Hackberries were gathered intensively, while pistachios and almonds also came from wild vegetation. Cereal chaff indicates that at least some crop processing occurred within the settlement. Grinding stones show that grain or other plants were reduced to meal, and hearths demonstrate routine heating and cooking. Exact dishes cannot be recovered: porridges, breads, or stews are reasonable possibilities, but none is directly demonstrated, and the community lived before pottery became standard in central Anatolia.

Spot something wrong in this reconstruction?

Animal bones reveal a gradual transformation rather than a sudden agricultural revolution. Early diets drew on wild sheep and goats, cattle, pigs, deer, hares, birds, fish, and other fauna. By about 8400 BCE, residents were capturing young wild sheep and goats and raising them temporarily—a strategy interpreted as small-scale live storage of meat. Enclosures, trampled dung, selective slaughter patterns, and urine-derived salts in settlement sediments independently support on-site caprine management. Later phases show reproduction in captivity and eventually a large, viable herd, with sheep becoming the principal meat source.

Human isotope results suggest that this shift did not produce a dramatic increase in the proportion of animal protein consumed. Similar isotope signatures among people associated with the same buildings may indicate household-level dietary patterns, although burial association is not a complete record of residence or food sharing.

Aşıklı Höyük matters because it documents settled life, cultivation, and herding developing together through experimentation. Sheep husbandry, wheat, barley, and pulses remain important in Anatolian foodways today, but no specific modern recipe can be traced directly to these households.

Historical context

Permanent villages were spreading across Southwest Asia, but cities, writing, metal tools, and ceramic cooking pots did not yet exist. Aşıklı Höyük occupied roughly four hectares beside a river corridor in an otherwise steppe and volcanic landscape. Its inhabitants belonged to a wider Pre-Pottery Neolithic world in which communities cultivated cereals and pulses, managed animals, and exchanged stone. High-quality obsidian from central Anatolian volcanic sources circulated hundreds of kilometres toward the Euphrates, Levant, and Cyprus, demonstrating extensive networks even before wheeled transport or pack-animal caravans.

Archaeological

Residue chemical

StrongSoluble salts, nitrogen isotopes, micromorphology, and mineralogical evidence from settlement deposits independently support substantial human and livestock urine accumulation and changing stock-keeping intensity.

Food identification

StrongPlant taxa and animal groups are identified from preserved botanical remains and bones, although their proportions and use varied through the occupation.

Dating

StrongStratigraphy and radiocarbon evidence place the principal sedentary sequence approximately between 8350 and 7300 BCE, with minor differences among published models.
