Reconstruction
Between approximately 7100 and 5950 BCE, generations at Çatalhöyük built, occupied, replastered and replaced tightly packed mud-brick houses on the Konya Plain. The settlement had no conventional streets between its dense clusters of buildings; inhabitants generally entered houses from the roof. Inside, raised platforms, hearths, ovens, storage rooms and bins organized daily activity. Some platforms also covered burials, while walls could carry repeated layers of painting, relief and animal installations. The house was therefore simultaneously a kitchen, storehouse, workshop, social setting, commemorative place and burial location.
Food remains make this household world unusually tangible. Archaeobotanical evidence is dominated by cereals, particularly emmer and einkorn wheat, alongside bread wheat, barley and some rye. Peas and lentils supplied pulses, while gathered plants included acorns, pistachios, almonds or related Prunus fruits, and seasonal underground plant foods. Animal bones show sustained reliance on domestic sheep and goats. Wild cattle and other hunted animals, hares, equids, fish and shellfish also contributed, while domestic cattle became more important later in the settlement’s history. These finds document available foods, although they cannot reveal the composition of every meal.
Preparing those foods required substantial labor. Glume wheats had to be threshed, dehusked, winnowed and cleaned before consumption. Grinding stones preserve microscopic plant residues and wear associated with processing cereals and other plants. Charred food fragments examined microscopically include bread-like, dough-like and porridge-like cereal preparations; some mixtures incorporated pulses, tubers or fish. Small deposits of pea pods, nutshells and wheat-processing debris, together with storage installations and grinding equipment inside individual buildings, indicate that much processing occurred at household scale. Hearths, ovens and increasingly effective pottery provided several cooking options, but specific recipes remain scholarly reconstructions rather than written instructions.
Meals linked private houses to the larger community. Most houses possessed their own facilities for storage and cooking, suggesting meaningful household autonomy even in an exceptionally dense settlement. Larger concentrations of animal remains and unusual deposits may reflect communal eating or feasting, but the boundary between ordinary meals and special gatherings is not always clear. Subfloor burials likewise should not be equated automatically with a modern nuclear family. Genomic research indicates strong female-line connections in many buildings, particularly earlier in the sequence, while later burial groups could include people who were not close biological relatives.
Çatalhöyük matters because it shows how food production supported dense, long-lived settlement while also creating demands for storage, repetitive processing, herding mobility and sanitation. Its ground grains, pulse mixtures, breads and porridges resemble broad food categories still familiar in Anatolia and beyond. That resemblance does not prove an unbroken recipe tradition, but it demonstrates the deep history of household grain-and-pulse cookery.
Historical context
Farming and herding were already established in parts of Southwest Asia, but writing, cities governed by states and metal tool industries had not yet appeared. Çatalhöyük’s East Mound covered roughly 13 hectares, and peak population estimates commonly range from about 3,500 to 8,000 people. The settlement stood in a seasonally changing landscape of river channels, wetlands and drier cultivated ground. Its residents maintained sheep and goats, raised crops and gathered wetland and upland resources. Obsidian and other nonlocal materials demonstrate connections extending well beyond the Konya Plain, while nearby Boncuklu Höyük preserved earlier regional experiments with sedentary life and cultivation.
