Columbus at La Isabela

Reconstruction

Late in December 1493, Christopher Columbus’s seventeen-ship second voyage reached northern Hispaniola carrying more than 1,200 people—perhaps about 1,500—as well as equipment, seed, and livestock. Construction began immediately, and the settlement formally named La Isabela emerged in early January 1494. It was the first intentionally founded Spanish colonial town in the Americas: a fortified enclave with a storehouse, church, plaza, workshops, stone official buildings, and roughly 200 wood-and-thatch dwellings.

Food made this ambitious project both possible and precarious. The expedition carried wheat products, wine, oil, vinegar, beans, chickpeas, cheese, salted meat, and dried fish. Seed and planting material included wheat, grapevines, melons, onions, lettuce, radishes, olives, fruit stones, and sugarcane. Horses, pigs, cattle, chickens, sheep, goats, and other animals were intended to reproduce a familiar Iberian food economy. Spoilage during the Atlantic crossing, rapid consumption, irregular resupply, and the colony’s limited capacity to cultivate food soon undermined that plan. Documentary evidence records chronic complaints about hunger, rancid bacon, spoiled cheese, scarce wine, and wheat that settlers sometimes ground by hand and ate as porridge.

Spot something wrong in this reconstruction?

Local Taíno communities already maintained productive food systems based on cultivated roots and other crops, fishing, gathering, and hunting. Spaniards obtained cassava bread, fish, fruit, and other provisions through exchange, demands, and increasingly coercive tribute arrangements. Prepared cassava bread reached the town regularly. Ceramic burén fragments—the griddles associated with making cassava flatbread—may indicate that some Spaniards also learned to prepare it, but disturbance at the site prevents certainty about who used particular fragments. Spanish cooking vessels remained conspicuous, suggesting continued preparation of Iberian-style stews, pottages, and grain porridges even when ingredients were scarce.

Archaeology complicates any simple story of failed European crops or complete starvation. Most fifteenth-century deposits were disturbed, and securely associated plant and animal remains are exceptionally sparse. Excavators therefore could not reconstruct the settlers’ diet statistically or prove wholesale crop failure. Written complaints are strong evidence of shortages, while ceramics and documentary food lists show that cooking and provisioning continued. Disease, exhausting labor, conflict, coercive colonial policies, storms, mutiny, and misplaced expectations compounded the settlement’s food problems.

La Isabela was largely deserted as Spanish activity shifted toward the southern coast and Santo Domingo; by 1498 its workshops and principal buildings were abandoned. Its food legacy nevertheless endured. Cassava became an accepted colonial provision, while pigs and other introduced livestock multiplied across the Caribbean. Sugarcane, brought during the same colonizing venture, later supported a plantation economy built on dispossession and enslaved labor. La Isabela thus marks not a single culinary invention but an early, violent stage in the creation of interconnected Atlantic food systems.

Historical context

Castile and Portugal were competing to control Atlantic navigation and commerce; the Treaty of Tordesillas was signed in 1494 while La Isabela was being built. Columbus’s fleet of seventeen ships had crossed from the Canary Islands carrying more than 1,200 people, livestock, seed, tools, and supplies over several thousand kilometers of ocean. Hispaniola was already occupied by numerous Taíno communities linked through regional exchange and supported by established farming and fishing systems. In Europe, printing was accelerating the circulation of voyage reports, while the Spanish monarchy had completed the conquest of Granada only two years earlier, in 1492.

StrongContemporary and near-contemporary letters, royal provisioning records, and chronicles document imported foods, livestock, shortages, Taíno provisions, tribute, and the settlement’s decline, although individual authors had colonial interests and biases.

Food identification

ModerateDocumentary lists identify numerous imported and local foods, but the poor archaeobiological record prevents confirmation of their relative dietary importance.

Dating

StrongDocumentary chronology and tightly dated European artifacts place construction from late 1493 into early 1494 and principal occupation through 1498.

Preparation method

ProbableEuropean cooking-pot forms support preparation of stews, pottages, and porridges. Burén fragments and written evidence support cassava use, but direct Spanish operation of the griddles at La Isabela remains an inference.

Geographic attribution

StrongThe excavated settlement is securely identified on the eastern side of the Bajabonico River mouth at La Isabela Bay on the north coast of the Dominican Republic.

Historical interpretation

ProbableThe interpretation of La Isabela as an early laboratory of colonial food adaptation is supported by documents and material culture, but the extent of local-food adoption and the balance between actual and perceived starvation remain disputed.
