This infrastructure turned familiar foods into standardized, portable retail products. Shelves and cases held onigiri, boxed meals, sandwiches, noodles, salads, desserts and drinks; counter equipment added hot oden and fried snacks. Packaging that kept crisp nori separate from moist rice helped transform onigiri from something predominantly made at home into an everyday purchased food. Stores could receive products repeatedly, monitor sales by item and time of day, and adjust orders to local demand.
