Reconstruction
Gesher Benot Ya'aqov sits on the shore of a former lake in Israel's Jordan Valley, and its waterlogged deposits preserve what other sites of this age destroy. In 2022 it produced the earliest evidence anywhere of hominins cooking food, dated to approximately 780,000 years ago. The previous earliest secure evidence of cooking stood at around 170,000 years, so the finding moved the threshold by roughly 600,000 years. The argument is built on an absence. Fish remains from the archaeological horizons consist overwhelmingly of pharyngeal teeth, the hard grinding plates in a cyprinid's throat, at over ninety-five per cent of the assemblage, while the fish bones themselves are almost entirely missing. That ratio is diagnostic rather than accidental. Sustained low heat destroys fish bone, which is fine and collagen-rich, while leaving the dense mineralised teeth intact. A pile of teeth without bones is what cooked fish leaves behind. Two further lines of evidence close the case. The teeth cluster spatially around what the excavators call phantom hearths, concentrations of burnt flint microartefacts that mark where fires burned even though no hearth structure survives. And size-strain analysis by X-ray powder diffraction on the teeth themselves shows they were exposed to temperatures below 500 degrees Celsius. That upper bound is the crucial number. Incineration in a hot fire, or a natural burn, drives crystal changes that indicate much higher temperatures. Sustained heat below 500 degrees is what cooking looks like: the fish were held near a fire rather than thrown into one. Two species dominate, both large-bodied barbs, Luciobarbus longiceps and Carasobarbus canis. A preference for two large species out of a lake fauna offering many indicates selection, not opportunism, and large fish repay processing effort in a way small ones do not. The nutritional consequences are substantial. Cooking denatures protein and makes it easier to digest, softens tissue so less chewing and less gut are needed, and kills the parasites that freshwater fish reliably carry. Cooked fish is also a source of fats that terrestrial game largely lacks. What makes this card matter alongside the fire evidence from Wonderwerk is the distinction between the two. Burned bone and ash establish that a fire existed; they do not establish that anything was cooked in it, because fire also gives warmth, light and protection. Gesher Benot Ya'aqov is the point where the evidence becomes specifically culinary: a chosen species, prepared at a controlled temperature, beside a hearth, repeatedly, in horizons spanning a long occupation of the lakeshore.
Historical context
Around 780,000 years ago, Homo erectus and related forms occupied Africa and Eurasia, and Acheulean handaxes were the dominant technology. Fire was in use at scattered sites but was not universal, and firemaking as opposed to fire-keeping is not demonstrated at this date. The Jordan Valley lay on the corridor between Africa and Eurasia and held a freshwater lake fringed with reeds and oak woodland, with elephants, fallow deer, wild boar and abundant fish. Modern humans would not appear for another half million years.

Limitations

The sub-500-degree finding constrains the temperature the teeth experienced. It establishes controlled heating rather than incineration but does not identify a specific technique, so descriptions of roasting, baking or steaming go beyond the evidence.
- minorarchaeological attribution
No hominin fossils are associated with the cooking horizons. The occupants are inferred from date and technology to be Homo erectus or a related form, not identified directly.
