Reconstruction
In 79 CE, Vesuvius ended daily life at Herculaneum while preserving extraordinary evidence of it. Pyroclastic currents buried this Roman coastal town beneath hot volcanic material. Buildings, wooden furnishings and foods were charred or sealed, while deposits in drains and latrines survived in unusually favorable conditions. Archaeologists can therefore study not merely foods depicted in paintings or praised by elite authors, but ingredients stored, prepared, discarded and digested by identifiable parts of an urban community.
Carbonized stores provide the most immediate evidence. A wooden chest discovered above a shop contained foods once separated in cloth bags: spelt, millet, peas, small broad beans, figs, dates, almonds, onions, pine nuts and olives. Round loaves and flatbreads also survived. Their forms show scoring that made portions easier to separate, while some carried stamps associated with ownership or production. Grain was ground in stone mills and sifted into flour; abrasion from lava millstones could leave mineral particles in bread, plausibly contributing to the dental wear observed among Herculaneum’s inhabitants.
The Cardo V sewer reveals what residents of a multistory complex of shops and modest apartments actually discarded. Because it had no effective outlet for solids, it functioned as a long cesspit collecting kitchen waste and excrement. Analysis of 220 liters of sediment identified 194 taxa, including 113 considered edible. Cereals and legumes formed staples, but figs, grapes, olives, apples or pears, nuts, eggs, herbs and spices broadened the diet. Identified seasonings included coriander, dill, fennel, celery, mint and black pepper. This diversity contradicts the old assumption that non-elite urban Romans necessarily survived on a monotonous grain ration.
Fish bones, otoliths, shells and sea-urchin fragments connect meals directly to the Bay of Naples. Most fish were small or juvenile coastal species, including sardines, anchovies, bream, horse mackerel, eels and flatfish. They were probably inexpensive mixed catches. Frying and boiling in stews are reasonable reconstructions from their size and discard patterns, not directly observed recipes. Salted fish and fermented sauces were probably consumed in this Roman setting, but the sewer remains do not demonstrate them unequivocally.
Human bones add a different timescale: collagen records foods eaten over years rather than one discarded meal. Compound-specific isotope analysis of 17 adults found substantial marine protein alongside cereals and terrestrial foods, with modeled differences between male and female diets. These results reveal variation by sex and perhaps occupation or access, but not a complete map of Roman social classes. Together, storerooms, sewers and skeletons make Herculaneum a rare food-system snapshot—linking farming, milling, baking, fishing, markets, household storage and inequality immediately before catastrophe.
Historical context
Herculaneum was a small but well-appointed town in the Roman Empire under Emperor Titus. Its walled area has been estimated at roughly 20 hectares and its population at about 3,000–4,000 people. The town stood directly on the Bay of Naples, with access to local fisheries, fertile volcanic soils and Mediterranean trade routes capable of supplying goods such as dates and black pepper. Public and private construction was still responding to the damaging earthquake of 62 CE. Approximately 300–340 eruption victims have been recovered from the ancient beach and adjoining waterfront vaults, only a portion of the former population.

Residue chemical
ModerateCompound-specific stable-isotope measurements were made directly on bone collagen from 17 adults. Estimated dietary proportions depend on Bayesian models and reference food groups rather than direct observation of individual meals.
Food identification
StrongMany botanical and faunal identifications were made using diagnostic remains and comparative collections. Some fish could be identified only to family or tentative species level.
Dating
StrongThe eruption provides an exceptionally secure terminal date in 79 CE, although some sewer material accumulated during approximately the preceding decade.
Preparation method
LimitedMilling and baking are directly supported by equipment and preserved bread. Frying or stewing small fish is a reasonable reconstruction from size and discard patterns; consumption as garum, salted fish or fermented paste is likely in context but not unequivocally demonstrated by the sewer assemblage.
Geographic attribution
StrongThe deposits, food stores and studied human remains come from Herculaneum. Most identified seafood is consistent with local Bay of Naples habitats, while a minority of plant foods and seasonings may reflect longer-distance trade.
Historical interpretation
ModerateDietary diversity among non-elite occupants is well supported. Interpretations of wealth differences within the sewer and gendered access among isotope-tested individuals are scholarly inferences; specific social classes or occupations cannot normally be assigned.
