Reconstruction
Torihama lay where the Hasu and Takase rivers met near the lakes and sheltered waters of Wakasa Bay. People returned to this resource-rich setting repeatedly from the Late Pleistocene into the middle Holocene. During the Early Jōmon period, discarded mollusk shells, animal bones, broken tools, pottery and plant remains accumulated beside a settlement. Cold groundwater and shell-derived calcium inhibited decay, preserving organic materials that ordinarily disappear from archaeological sites.
The resulting record documents a food system extending across freshwater, coastal and forest environments. Shells provide direct evidence that mollusks were gathered, while bones reveal fish, wild boar and sika deer. An analysis of Early Jōmon fish remains identified eighteen species in thirteen families. Freshwater fish predominated, especially crucian carp, with many reconstructed individuals measuring about 20–28 centimeters. Marine fish were also present, showing that inhabitants did not depend on a single aquatic zone. Nuts, berries and other plant remains supplemented these foods; identified plants include chestnut, perilla and bottle gourd, although the domestication or deliberate cultivation status of individual specimens requires caution.
Exactly how every food was prepared is unknown. Shellfish collection and consumption are demonstrated by the midden, but the shells alone do not establish whether their flesh was roasted, steamed or boiled. Pottery chemistry provides firmer evidence for cooking aquatic animals generally. Molecular and isotopic analysis of residues from 143 Torihama vessels found that marine and freshwater products dominated pottery use across roughly nine millennia. Early Jōmon residues became more varied, but often fit fish better than the freshwater mollusks forming much of the midden; shellfish cooking in pots remains possible rather than proven vessel by vessel. Plant foods were abundant at the site, yet left little clear signal in the analyzed pottery, suggesting that many were processed by other methods or that low-lipid plant traces were obscured.
Torihama was more than a refuse heap. Excavations uncovered dwellings, storage pits, baskets, ropes, wooden containers, axe handles and dugout canoes. These finds reveal the equipment needed to harvest, carry, store and prepare seasonal resources. Archaeologists have therefore proposed a change from intermittent use, perhaps including seasonal nut gathering, to a more enduring Early Jōmon settlement. That model is a scholarly interpretation rather than a directly observed population history.
Torihama matters because it overturns the assumption that pottery, substantial settlements and elaborate woodworking required cereal farming. Its inhabitants organized a durable lifeway around fishing, shellfish gathering, hunting and forest plants. Their aquatic pottery does not establish a direct lineage to any particular modern Japanese dish, but it demonstrates that cooking fish and other aquatic foods in ceramic vessels has exceptionally deep roots in the archipelago.
