Reconstruction
At Eynan–Mallaha, beside the former Lake Hula in the upper Jordan Valley, Natufian hunter-gatherers repeatedly constructed a hamlet long before domesticated crops and livestock supported the region’s farming villages. Excavations begun in 1955 exposed circular and semicircular, partly sunken buildings with stone-faced walls, post settings and successive floors. Later work documented roughly 25 major buildings, numerous pits and hearths, and 126 human skeletons. Some structures were rebuilt or occupied intermittently, so “permanent village” is too simple: the evidence supports sustained and recurring settlement, with mobility varying through time.
The surrounding wetlands, grasslands and wooded slopes offered unusually diverse foods. Gazelle was the best-represented large mammal, while deer, wild boar, hare and other game also occurred. Fish, freshwater crabs, terrestrial and aquatic mollusks, and many birds broadened the animal-food supply; Final Natufian bird assemblages particularly indicate waterfowl taken for food. Hooks and diverse fish remains confirm fishing, although exact capture and cooking procedures usually cannot be reconstructed. Hearths demonstrate fire use, but roasting, boiling in perishable containers and other specific techniques remain reasonable possibilities rather than direct observations.
Plant preservation at Eynan is poor, making older claims of intensive cereal dependence difficult to prove. Phytolith studies nevertheless indicate that grasses, including small quantities of wild wheat and barley, reached the settlement, probably for consumption. More recent microscopic analysis of ground-stone tools found residues and wear associated with processing both grains and legumes. Mortars, pestles and grinding stones could reduce seeds into meal or paste, but no intact Eynan recipe identifies porridge, bread or another finished dish. Evidence from other Natufian sites shows that bread-like foods and fermented cereal beverages were technologically possible, not that Eynan’s inhabitants necessarily prepared them.
Food processing was embedded in domestic and social life. A deep mortar remained in working position inside one Final Natufian structure, while hearths, floors and repeated construction indicate investment in place. Burials were closely associated with buildings, including the celebrated interment of an older person with a puppy. House-mouse remains provide independent evidence that periods of intensive occupation created a commensal settlement environment, although fluctuations in mouse species suggest that residential permanence changed.
Eynan matters because it separates sedentism from farming: people could build, process food and maintain enduring communities while relying primarily on wild resources. Its grinding practices belong to the technological background from which later cultivated-grain cuisines emerged, but no direct culinary lineage connects an Eynan meal to a particular modern dish. The defensible legacy is broader—the organization of food procurement, processing and shared residence before agriculture.
Historical context
The southern Levant was passing from the terminal Pleistocene into the early Holocene. Eynan’s long sequence overlapped the colder, drier Younger Dryas, approximately 10,900–9,700 BCE, as well as subsequent warming. Pottery, domesticated cereals and herded food animals had not yet become established locally. Natufian communities nevertheless built substantial settlements, maintained cemeteries and moved materials over long distances: obsidian found at Eynan originated in Cappadocia, several hundred kilometers away. Elsewhere in the Natufian world, people at Shubayqa 1 made bread-like food from wild plants, while evidence from Raqefet Cave has been interpreted as cereal-beverage production.

Eynan’s absolute chronology remains poorly constrained by a small number of reliable radiocarbon dates, so the full range should be treated as approximate.
