Novgorod’s Wooden Streets

Under Novgorod’s streets lies an unusually detailed archive of medieval eating. From the tenth century onward, inhabitants repeatedly laid timber pavements over older, muddy surfaces. Houses, yards, workshops and refuse accumulated beside and beneath them. Waterlogged, oxygen-poor soil then preserved wood, leather, seeds, animal bones and everyday messages scratched onto birch bark. Tree-ring dating of successive pavements and buildings allows many finds to be placed within unusually precise urban sequences.

The evidence describes ingredients more securely than meals. Archaeobotanical samples contain rye, barley, oats, wheat and millet, together with peas, hops, hemp, hazelnuts, apples, raspberries, bilberries and wild strawberries. A mid-thirteenth-century cesspit near Borkova Street produced especially direct evidence of consumed fruits and berries. Preservation varies: uncharred cereal grains decay readily even in waterlogged deposits, while hard seeds and nutshells survive better. Their relative abundance therefore cannot be read as a simple menu or measure of dietary importance.

Animal remains supply another part of the picture. Domestic mammal assemblages are dominated by cattle, followed by pigs and smaller numbers of sheep and goats, although proportions differ by excavation and period. Fish bones are abundant where deposits were sieved. Cyprinids, pike and zander are prominent, while ducks and other waterfowl also occur. Hare, elk and beaver were eaten, but wild mammals formed only a small part of the identified meat supply. Birch-bark documents add commodities that bones and seeds cannot explain alone: records concern rye, oats, malt, meat and other provisions collected as dues, exchanged, purchased or sent between town and countryside.

Spot something wrong in this reconstruction?

No medieval Novgorod cookbook survives, so preparation requires caution. Grain was certainly stored, processed and exchanged. Bread, malt and beer occur in written evidence, while porridges and similar boiled cereal foods are reasonable reconstructions rather than excavated recipes. Fish could have been boiled, roasted, dried or salted, but individual bones seldom identify which treatment was used. Pottery demonstrates cooking capacity, not the contents of a particular dish. Likewise, fruit remains prove consumption or disposal but do not by themselves distinguish fresh fruit from dried, cooked or fermented products.

Together these sources reveal a city provisioned by farms, forests, rivers, lakes and long-distance commerce. Novgorod’s food system joined household labor to rents, tribute and markets, while its wooden infrastructure unintentionally created one of Europe’s richest records of ordinary urban life. Rye bread, grain porridges, fermented drinks, freshwater fish and gathered berries remain familiar in northern Russian food culture, but archaeology does not establish that modern recipes descend unchanged from medieval ones.

Historical context

Novgorod grew from an early urban settlement into the center of a powerful city-republic. Estimates suggest roughly 10,000–15,000 inhabitants by the early eleventh century and perhaps 20,000–30,000 by the early thirteenth, although medieval population figures remain approximate. The Volkhov River connected Lake Ilmen with Lake Ladoga and the Baltic, placing the city on routes extending toward Scandinavia, Byzantium and Central Asia. From the twelfth century, German and Gotlandic merchants strengthened the Baltic connection later associated with the Hanse. Novgorod’s archaeological deposits now cover about 347 hectares, reach 7–8 meters deep in places and preserve organic material because they are waterlogged and anaerobic.

Archaeological

StrongDeep waterlogged urban layers directly preserve successive timber streets, buildings, yards, pottery, refuse and other evidence of household and commercial activity.

Archaeobotanical

StrongSystematically sampled deposits and a mid-thirteenth-century cesspit contain identified cereal grains, pulses, hops, hemp, fruit pips, berry seeds and nutshells. Preservation and sampling biases limit dietary quantification.

Zooarchaeological

StrongLarge assemblages directly document cattle, pig, sheep or goat, fish, birds and limited wild-mammal exploitation, with cut marks and carcass representation informing butchery studies.

Written sources

StrongBirch-bark documents are contemporary household, fiscal and commercial texts. Some directly mention provisions and agricultural commodities, although they are not comprehensive food records.

Food identification

ModeratePlant and animal taxa are often identifiable, but remains usually establish ingredients rather than named dishes, recipes, frequency of consumption or social distribution.

Dating

StrongStratigraphy and extensive dendrochronological study of timber pavements and buildings provide unusually secure sequences from the tenth through fifteenth centuries.

Preparation method

LimitedPottery, butchery evidence, malt references and occasional written food terms support processing and cooking, but most specific preparations such as porridges, drying, salting or particular soups remain reasonable reconstructions.

Geographic attribution

StrongThe excavated deposits and birch-bark documents are securely associated with medieval Novgorod, while environmental evidence connects urban consumption with the Lake Ilmen and Volkhov hinterland.

Historical interpretation

ModerateIntegration of archaeology, environmental remains and documents strongly supports a mixed urban food system, but differences in preservation, recovery and documentary emphasis prevent a complete or statistically representative menu.
