Reconstruction
Pompeii’s “final day” is not a menu preserved minute by minute. It is something more valuable: a citywide assemblage of shops, kitchens, ovens, storage vessels, food waste, botanical remains and human victims sealed by the eruption of Vesuvius in 79 CE. The surviving evidence shows what foods were available and how the urban food system worked immediately before destruction, but only rarely proves that a particular item was being eaten when the eruption began.
At about midday or early afternoon, Vesuvius produced a towering eruption column. Pumice then fell on Pompeii for many hours, accumulating in streets and overloading roofs. Some inhabitants escaped during this phase; others sheltered or were trapped by collapses. During the following morning, pyroclastic currents—fast-moving mixtures of hot gas, ash and debris—reached the city. Buildings, equipment and remaining inhabitants were buried beneath several metres of volcanic material. Pliny the Younger described the wider disaster from across the Bay of Naples, while modern volcanology reconstructs its sequence from deposits and structural damage.
The buried foodscape was remarkably varied. Pompeian bakeries employed volcanic-stone mills, some driven by animals, to grind cereals before dough was shaped and baked in masonry ovens. Carbonized bread survives, although claims that every loaf represents baking interrupted at the eruption require context-specific evidence. Numerous thermopolia sold prepared food and drink from counters fitted with large jars. At the Regio V thermopolium, animal remains recovered from containers included duck, pig, sheep or goat, fish and land snails. These remains establish ingredients or food waste, not a complete recipe. Archaeobotanical deposits elsewhere document wheat, barley, millets, legumes, vegetables and abundant fruits.
Olives, olive oil, wine and fermented fish sauces connected household cooking to specialized production and trade. An amphora fragment containing scales, fish bones and solid residue attests garum at Pompeii, while labeled vessels and a mosaic identify the prominent fish-sauce business of Aulus Umbricius Scaurus. Scientific analysis has also authenticated ancient olive oil from the Vesuvian archaeological collections, although not every early museum food specimen has proved ancient. Vineyards, orchards and fertile land around Vesuvius supplied the city, while amphorae brought additional products through Mediterranean exchange.
Pompeii matters to food history because it preserves an integrated urban system: cultivation, milling, baking, retailing, cooking, dining and waste disposal. Modern bakeries, prepared-food counters and fermented condiments are not direct descendants of individual Pompeian businesses, but the site demonstrates that specialized food production, meals purchased outside the home and long-distance ingredient networks were already ordinary features of city life nearly two thousand years ago.
Historical context
Pompeii was a walled city of roughly 66 hectares in the Roman Empire; household-based studies generally favor a population near 11,000, although estimates remain debated. About 44 hectares have been excavated. Emperor Titus had succeeded Vespasian in June 79 CE, and the Bay of Naples formed part of a Mediterranean economy linking Italian farms and ports with producers in Iberia, North Africa and the eastern provinces. Pompeii overlooked the Sarno plain and stood near a river port, while vineyards and olive groves exploited the fertile volcanic landscape surrounding Vesuvius.

StrongCarbonized and mineralized plant remains and remains from latrines and refuse deposits identify cereals, millets, legumes, fruits and other plant foods consumed at Pompeii over time.
Zooarchaeological
StrongAnimal bones from food-related contexts, including the Regio V thermopolium, directly attest the presence of duck, pig, caprines, fish and land snails, although they do not preserve a complete recipe.
Residue chemical
StrongChemical analyses have authenticated fish-sauce remnants from Pompeian containers and olive oil from the Vesuvian archaeological collections; such findings apply to the analyzed specimens rather than every historically labeled museum object.
Written sources
ModeratePliny the Younger's Letters 6.16 and 6.20 describe the eruption and its effects around the Bay of Naples. They were written years afterward, and Pliny observed events from Misenum rather than Pompeii.
Iconographic
StrongPainted counters, labeled vessel images and the mosaic associated with Aulus Umbricius Scaurus provide direct evidence for food display, commercial identity and fish-sauce marketing.
Food identification
StrongMany foods are supported by identifiable seeds, fruits, bones, fish remains, inscriptions or chemical residues; proposed combinations into particular dishes are less certain.
Dating
StrongStratigraphy, written testimony, inscriptions and historical evidence firmly date the destructive eruption to 79 CE. The traditional date of August 24 is disputed, and a date after October 17, possibly October 24–25, is favored by substantial modern research.
Preparation method
ModerateMills, ovens, hearths, counters and fermentation containers establish broad processes such as grinding, baking, heating and fish-sauce production. Exact recipes and the operating state of every installation on the final day are not always recoverable.
Geographic attribution
StrongThe structures and most cited remains were excavated within Pompeii or its Vesuvian territory; evidence from Herculaneum and other nearby sites is used only as regional comparison where identified.
Historical interpretation
ModerateThe interpretation of Pompeii as an integrated urban food system is strongly supported, but social-class associations, individual behavior and exact final meals remain partly inferential.
Visual reconstruction
LimitedArchitecture and equipment permit plausible reconstructions of bakeries, kitchens and food counters, but colors, staffing, food placement and moment-by-moment activity require interpretive choices.
