Reconstruction
Beside the Tiber, southwest of ancient Rome’s center, imperial food imports created a hill. Monte Testaccio is not a natural rise but an organized accumulation of broken transport amphorae deposited near the Emporium and major warehouses. Its surviving mass, roughly 40–50 meters high, contains fragments from millions of vessels. More than 80 percent are generally identified as Dressel 20 amphorae from Baetica, approximately modern Andalusia; most of the remainder are oil containers from Roman North Africa, with only a small eastern Mediterranean component.
The jars document the movement of olive oil rather than a particular meal. Baetican workshops manufactured the large, globular Dressel 20 along the Guadalquivir and Genil river systems, close to oil-producing districts and navigable routes. A typical vessel weighed about 30 kilograms empty and carried roughly 70 kilograms of oil, although capacity varied. From riverside production zones, cargoes could travel downstream and then by sea toward Italy. Once the oil reached Rome and entered local storage and distribution, its bulky container had limited further value. The emptied amphorae were therefore broken and deposited at Testaccio.
Excavation shows that this was not casual household rubbish. Depositors formed successive stepped platforms. Walls were built from amphora bodies whose bases had been removed; these were packed with additional sherds to add weight, and more fragments were tipped behind them. Consular dates preserved in painted inscriptions identify deposits from particular years, including closely sequenced platforms of the late second and early third centuries. Surface material studied by Heinrich Dressel included dates from 145 to 257 CE, while broader reconstruction places the beginning of deposition as early as the Augustan period and its end around the 260s or 270s.
Stamps, graffiti and painted tituli picti turn the mound into an unusually detailed archive. They can record vessel weight, net oil weight, merchants or transporters, production or administrative districts, and fiscal checks; some readings and the functions of individual names remain debated. Together they provide direct evidence for standardized containers, measurement, inspection and long-distance commerce. They also indicate interaction between private carriers and Roman public administration, although the degree of state control over every shipment should not be assumed.
Olive oil was used in Roman cooking, sauces, relishes and the dressing or preservation of foods, but Testaccio cannot identify the recipes or social status of its final consumers. Its defensible modern connection lies instead in logistics: agricultural specialization, labeled containers, weight controls, inspection and disposable packaging remain features of food supply chains. Monte Testaccio preserves their ancient consequences on a monumental scale.
Historical context
Rome was among the largest cities in the world, with its population commonly reconstructed in the high hundreds of thousands and possibly near one million. Supplying it required Mediterranean-scale transport and extensive warehouses, quays and administrative systems. Between approximately 112 and 120 CE, the emperors Trajan and Hadrian enlarged Portus with a hexagonal harbor basin of about 33 hectares, improving the transfer of seaborne cargoes toward Rome. Baetica, North Africa and other provinces supplied the capital with oil, grain, wine and preserved fish during the Antonine and Severan periods.

Limitations

The supplied start date of 100 CE captures an important high-imperial phase but is too late for the mound as a whole. Archaeological reconstruction commonly places the first platform’s formation in the Augustan period, beginning in the late first century BCE or early first century CE.

The supplied end date of 250 CE is approximate but slightly early. Dated surface inscriptions extend to 257 CE, and Dressel 20 deposition or use of the dump appears to have continued into approximately the 260s or 270s.
