Shanidar Neanderthals

Shanidar Cave in the Zagros mountains of Iraqi Kurdistan is best known for Neanderthal burials, but its most consequential food evidence came out of the ash. Charred fragments of plant food from layers dated to roughly 70,000 years ago were analysed and published in 2022, and what they record is not gathering but cooking, in several deliberate stages. The identified ingredients are wild grass seeds mixed with pulses, principally bitter vetch, grass pea and wild pea. Pulses are the interesting component. Raw, they are bitter and mildly toxic, protected by a tough husk, and they are not a food you can simply pick up and eat. The residues show they were soaked first, then coarsely ground or pounded between stones to break the husk away, then heated with water. That is a sequence, and each step has a purpose: soaking softens and begins leaching the bitter compounds, pounding removes the indigestible coat, heat completes the detoxification and gelatinises the starch. None of it is instinctive and all of it takes time. The subtler finding concerns flavour. The processing reduces bitterness but the evidence suggests it was not driven to completion — some was left in. If that reading holds, these were not people merely rendering a difficult food safe but people cooking to a preference, which is a different proposition entirely. Combining grass seeds with pulses in one preparation points the same way, toward a dish rather than a ration. The wider dietary picture from the same work includes wild nuts and other legumes with edible pods, so the plant component of the Neanderthal diet was both broad and processed. This matters because Neanderthals have long been characterised as specialist carnivores, an image built partly on isotope data dominated by animal protein and partly on the assumption that plant food leaves no trace. Charred plant remains are exactly the trace that assumption overlooked, and where the sediment preserves them the picture changes. The same cave holds early modern human occupation around 40,000 years ago, and the plant food remains from those layers show comparable complexity. Read together, the two sets of layers suggest that multi-stage plant preparation was not a modern human innovation that replaced a simpler Neanderthal diet, but a shared capability present in both populations. What Shanidar supplies, then, is the oldest well-published evidence of compound plant cooking, and a corrective to a longstanding picture of Neanderthals as hunters who happened to eat. They were also cooks, working bitter seeds into something worth the effort of making.

Historical context

Around 70,000 years ago, Neanderthals occupied Europe and western Asia while early modern humans were established in Africa and beginning to appear in the Levant. Fire was in routine use, along with hafted stone tools and hide working. The Zagros mountains held oak woodland and grassy uplands with wild goat, deer, tortoise and abundant seed-bearing plants. Grinding stones existed but pottery, agriculture and domesticated animals lay tens of thousands of years ahead; every pulse eaten here was gathered wild.
