Shubayqa’s Desert Foragers

At Shubayqa 1, on the edge of a playa in northeastern Jordan’s Black Desert, Natufian hunter-gatherers repeatedly established substantial occupations between about 14,600 and 11,500 calibrated years before present. The landscape is arid today, but wetland plants, waterfowl, sediments, and landforms indicate that water collected beside the settlement during the Late Pleistocene. This productive meeting of wetland and steppe gave foragers access to tubers, grass seeds, game, and migratory birds without requiring agriculture.

Excavations revealed semi-subterranean stone structures, fire installations, middens, burials, ground-stone implements, animal bones, and exceptionally well-preserved charred plants. Two Early Natufian fireplaces contained more than 65,000 plant macroremains in the initial study, most notably tens of thousands of club-rush rhizome-tubers. Later analysis of the full sequence recorded more than 90,000 non-woody plant remains and at least 55 plant taxa. Club-rush tubers dominated the earliest occupation, while wild barley, einkorn-type wheat, feathergrass, small-seeded grasses, legumes, pistachio, almond, and other plants formed parts of a much broader foraging economy. The cereals were wild rather than domesticated, and current evidence does not demonstrate cultivation at the site.

Spot something wrong in this reconstruction?

Among hundreds of fragments of prepared food, researchers identified 24 as flat, unleavened bread-like products. Scanning electron microscopy revealed cereal tissues, finely fragmented grain, porous food matrices, and, in several pieces, non-cereal tissues most plausibly derived from club-rush tubers. The surviving crumbs do not disclose complete recipes. Nevertheless, their structure supports a reconstructed sequence in which selected wild grains and sometimes tubers were cleaned, ground, mixed with water, shaped into thin preparations, and cooked in or near the hearth. Experiments suggest that club-rush tubers could have been uprooted, dried or roasted, gently ground, and incorporated into food, but these exact steps remain an experimentally informed inference rather than direct observation.

Animal foods were equally important. Gazelle and other hunted mammals supplied meat, while Late Natufian deposits preserve an unusually large bird assemblage. Waterfowl appear to have been captured in numbers during seasonal migrations, demonstrating that broad-spectrum subsistence was an adaptable strategy rather than simply desperate recourse to poor foods.

Shubayqa’s importance lies not in proving that its inhabitants invented modern bread, but in showing that labor-intensive flour foods existed roughly four millennia before cereal agriculture became established in Southwest Asia. Bread-making therefore did not have to await domesticated wheat, permanent fields, or pottery. There is no demonstrated continuous recipe linking these crumbs to any particular modern flatbread, yet the underlying operations—selection, grinding, mixing, shaping, and heating—remain fundamental to bread production today.

Historical context

The world was approaching the end of the Pleistocene. Shubayqa’s earliest occupation fell largely within the relatively warm Bølling–Allerød interval, while its latest phase overlapped the colder Younger Dryas and the beginning of the Holocene. Sea levels remained well below modern levels, farming had not yet become established, and communities across the Levant were experimenting with more persistent settlements, intensive plant processing, storage, and broad-spectrum hunting. Shubayqa 1 lay beside an approximately 12-square-kilometre playa that probably supported a seasonal or longer-lasting wetland, although the surrounding region receives less than 200 millimetres of annual rainfall today.

Archaeological

StrongExcavated structures, hearths, middens, burials, tools, food fragments, and associated faunal and botanical remains directly document repeated Natufian occupation and food-related activity.

Archaeobotanical

StrongSystematically recovered charred macroremains directly identify a diverse plant assemblage dominated in the Early Natufian by club-rush tubers, with wild grasses, cereals, legumes, fruits, and nuts also represented.

Zooarchaeological

StrongLarge, stratified assemblages of mammal and bird bones support hunting of gazelle and other animals and intensive seasonal exploitation of waterfowl.

Food identification

ModerateTwenty-four charred fragments were classified as bread-like through morphology and scanning electron microscopy. The classification is well supported, but the products cannot be equated precisely with standardized modern bread.

Dating

StrongTwenty-seven AMS radiocarbon measurements establish Early and Late Natufian phases between approximately 14,600 and 11,500 cal BP, separated by occupational gaps.

Preparation method

ProbableFine fragmentation, cereal tissues, ground grain damage, ground-stone tools, food structure, and experiments support cleaning, grinding, mixing, shaping, and heating. The exact sequence, recipes, and cooking surface were not directly observed.

Geographic attribution
