St. Augustine began in 1565 as a Spanish military and administrative outpost, but its food was never simply transplanted from Spain. The settlers entered a coastal landscape already managed and understood by Timucua communities. Excavated animal bones, charred plant remains, ceramics, storage vessels, and grinding tools reveal households combining Iberian expectations with Indigenous ingredients and knowledge. These remains describe a changing food system rather than a single documented menu.

Colonists valued wheat bread, wine, olive oil, legumes, spices, and meat from introduced livestock. Olive jars and imported tablewares attest to overseas commerce, although a jar’s original contents cannot always be identified. Pigs, cattle, and chickens became part of colonial production, but zooarchaeological assemblages show that local wild foods remained essential. Estuarine fish, shellfish, deer, turtles, and other Florida fauna supplemented or replaced unreliable imported provisions. Maize became especially important, alongside locally available beans, squash, and gathered resources.

Preparation practices demonstrate cultural convergence particularly clearly. By the late sixteenth century, many St. Augustine kitchens used locally obtained Timucua pottery rather than European metal cookware. Maize was ground by hand, sometimes with basalt manos and metates imported through Mexico. Archaeologists infer that ground maize entered porridges, breads, or stews, but surviving tools and residues rarely identify a precise recipe. Iberian cooking already included boiled stews, roasting, and frying, making local pottery adaptable to Spanish culinary aims. European-style glazed dishes and utensils could still be used for serving, preserving a visible distinction between an Indigenous-influenced kitchen and a formally Spanish table.

The people performing this work were diverse. Spanish and American-born settlers lived alongside Native people and free and enslaved Africans. Documentary and household evidence supports the interpretation that Indigenous and mixed-ancestry women played important roles in domestic labor and transmitted local cooking knowledge, although individual cooks are seldom named. Access also varied by status: prosperous households obtained imported ceramics and luxuries, while ordinary residents depended more heavily on regional markets, fishing, hunting, and maize.

St. Augustine’s supply line, formalized through the royal situado subsidy around 1570, was chronically irregular. Droughts, storms, warfare, disease, and delayed ships repeatedly threatened wheat and maize harvests or imported rations. Yet archaeology complicates official complaints of near-starvation by showing persistent use of abundant local animals. By the seventeenth century, mission communities also sent maize, produce, fish, game, and introduced livestock toward the capital. The enduring significance of St. Augustine’s table lies not in one surviving dish but in this early, well-documented fusion of Atlantic trade, Indigenous technology, local ecology, and colonial inequality—a pattern that continued to shape regional foodways.

St. Augustine was the capital and principal garrison of Spanish Florida, established to defend Atlantic shipping routes and Spain’s claims in the Southeast. It remained a small frontier town: its military community was roughly 300 people for much of the seventeenth century, with the wider population reaching approximately 500–600 by mid-century. The settlement depended on maritime connections with Cuba and New Spain, while Franciscan missions eventually extended hundreds of kilometers along the Atlantic coast and across northern Florida. Recurrent droughts affected northeastern Florida between the 1560s and early 1600s, and delayed supply shipments could be as disruptive as crop failure.
