The Salt Men of Chehrabad

The Salt Men of Chehrabad are not deliberately embalmed mummies but workers preserved by the mineral they entered the earth to extract. Beginning with an accidental discovery in 1993, human remains representing at least eight individuals were identified in the Douzlākh salt mine near Chehrabad in northwestern Iran. Radiocarbon dating and archaeological context place them in two principal phases: the Achaemenid period, especially around the fourth century BCE, and the Sasanian era between the third and sixth centuries CE. Fractures and severe compression indicate that most died in separate gallery collapses.

Salt drew moisture from their tissues and inhibited decomposition, preserving skin, hair, internal tissues, clothing, animal remains, plant material and excrement that would normally disappear. The result is an unusually intimate record of labor rather than burial. Miners wore wool garments, leather footwear and fur, and worked with iron picks and other wooden-hafted tools. Excavations indicate underground galleries and chamber-and-pillar extraction, while transport animals and the nearby Küllük camp formed part of the mine’s logistical system. No substantial system of timber roof supports has been demonstrated for the ancient galleries.

Spot something wrong in this reconstruction?

Food remains reveal provisions carried underground and waste left on gallery floors. Achaemenid deposits have produced comparatively sparse crop evidence, including barley and a peach stone. Sasanian layers contain a wider recorded range: barley and several wheats, together with grapes, apricots, plums, figs, oleaster fruits and walnuts. Eaten grape panicles indicate that at least some grapes arrived fresh rather than dried. Sheep and goat dominate the studied animal-bone assemblage, while cattle, pig or boar, and chicken are also represented. Much of the fragmented large-animal bone is reasonably interpreted as food refuse, although not every bone necessarily records consumption.

Palaeofaeces and preserved intestinal material add a less comfortable dimension. Researchers identified several intestinal parasites, including Taenia-type tapeworm eggs. In a human host, such evidence is consistent with eating infected raw or insufficiently cooked meat, but the eggs alone do not securely identify the meat species or a particular recipe. The findings also document close contact among people, livestock, pack animals and contaminated working spaces.

Chehrabad therefore connects food with extraction, danger and organized supply. Its miners depended on surrounding farms, orchards, herds and transport networks while producing high-quality culinary rock salt for communities beyond the valley. The site does not establish a direct lineage to a modern Iranian dish. Its modern relevance is broader: ordinary table salt still rests on specialized mining, transport and labor, while the mine’s preservation demonstrates the same dehydrating property that has long made salt useful in food storage.

Historical context

Chehrabad belonged to two very different imperial worlds separated by several centuries. Achaemenid Persia, from about 550 to 330 BCE, governed territories extending from Anatolia and Egypt toward Central and South Asia through administrative and transport networks that moved workers and provisions over long distances. The Sasanian Empire, founded in 224 CE, later made Iran one of the principal powers of Late Antiquity and competed with Rome and Byzantium. In the highlands around Chehrabad, reliable food production depended on freshwater management and irrigation, while donkeys, sheep and goats helped connect farms, camps and mineral deposits. Salt was both an everyday dietary necessity and a transportable commodity.

Evidence

Archaeological

StrongSystematic excavation documented mining galleries, tools, clothing, human remains, animal remains, plant remains and working deposits in stratified Achaemenid and Sasanian contexts.

Archaeobotanical

StrongMacrobotanical remains directly identify cereals, fruit stones, seeds, grape panicles and nuts, although preservation and excavation intensity differ substantially between periods.

Zooarchaeological

StrongMore than one thousand studied animal bones from the mine and nearby camp include abundant sheep and goat remains, with cattle, pig or boar, chicken and other animals also represented.

Food identification

StrongMany plant foods are identified from diagnostic seeds, stones and other macroremains. Fragmented livestock bones and their depositional contexts strongly support meat consumption, though individual specimens may have entered the mine for other reasons.

Dating

StrongRadiocarbon determinations, stratigraphy and associated artifacts distinguish major Achaemenid and Sasanian mining phases and date several individuals independently.

Preparation method

LimitedThe evidence identifies foods more securely than recipes or cooking techniques. Tapeworm evidence is compatible with raw or undercooked infected meat but does not reveal a specific dish, meat species or routine preparation practice.

Geographic attribution

StrongThe remains were recovered directly from the Douzlākh salt mine and its associated Küllük mining camp in the Talkherud basin of Zanjan Province.

Historical interpretation

ModerateThe interpretation of an organized provisioning and transport system is supported by food waste, pack-animal evidence, tools and settlement archaeology. The precise role of imperial authorities and the origins or status of individual workers remain partly interpretive.
