Reconstruction
When York Archaeological Trust excavated 16–22 Coppergate between 1976 and 1981, archaeologists uncovered about 1,000 square metres of a densely occupied neighborhood on land between the Rivers Ouse and Foss. Timber buildings, fenced properties, yards, pits and working areas survived within deep, moist deposits. Oxygen-poor waterlogging slowed decay, preserving wood, leather, seeds, insects and other organic materials that usually vanish. The result is an unusually intimate record of food, work and sanitation in Anglo-Scandinavian York.
Cereal remains occur especially as wheat-or-rye bran, accompanied by barley and oats. Much of the bran came from deposits interpreted as human fecal waste, making it direct evidence that grain had passed through residents’ bodies, although it cannot identify individual recipes. Fruit stones, seeds and nutshells show that cultivated and gathered plant foods supplemented cereals. Plausible meals included bread, porridge or pottage, but these forms are reasonable reconstruction rather than demonstrated Coppergate recipes. Charred grain establishes exposure to fire, not a specific cooking technique.
Animal bones reveal a meat supply dominated by cattle, with smaller contributions from sheep and pigs. Butchery waste mixed with debris from household consumption. Domestic fowl and geese were the most frequent birds, while sieved samples produced fish bones dominated by eel and herring. Oyster shells were also abundant. This evidence describes an urban population drawing food from farms, rivers, coastal fisheries and shellfish beds beyond the excavated properties. It does not reveal that every resident ate alike, and durable bones and shells survive differently from dairy products, leafy vegetables or prepared foods.
Food waste also records difficult living conditions. Cesspits and organic accumulations contained eggs of intestinal roundworms and whipworms, although some deposits may combine human and pig feces. Insects associated with decaying matter help reconstruct damp yards, rubbish and stored materials. These findings are direct evidence for sanitation problems, but the severity of illness among particular individuals cannot be calculated from pit deposits alone. Food scraps, craft debris and excrement occupied the same crowded urban landscape.
Coppergate transformed understanding of early medieval towns by showing that diet cannot be separated from trade, animal supply, waste disposal and household industry. Many identified foods—grain breads, beef, pork, poultry, herring, eel and oysters—remain familiar in Britain, but archaeology does not demonstrate continuous Coppergate recipes. Its clearest modern legacy is methodological: systematic recovery of seeds, parasites, insects and small bones now allows urban refuse to be read as evidence for food systems and health, not merely as dirt surrounding more attractive artifacts.
Historical context
York was a major political, ecclesiastical and commercial center in northern England. A Viking army captured the city in 866, after which control was repeatedly contested among Scandinavian rulers and expanding English kingdoms; Scandinavian rule at York ended in 954. The rivers Ouse and Foss connected the settlement with its agricultural hinterland and longer-distance routes. Archaeological synthesis suggests that Anglo-Scandinavian deposits may have extended across as much as roughly 100 hectares. One highly tentative calculation from preserved fecal deposits proposed an average urban population on the order of 6,000–10,000 people, but incomplete preservation and off-site waste disposal make that range uncertain.

StrongLarge, stratified bone assemblages directly identify cattle, sheep, pigs, birds and fish. Cattle predominated, while sieved fish samples were especially rich in eel and herring.
Food identification
StrongCereal remains, fruit stones, nutshells, animal bones, fish bones and shells securely identify broad food categories and many taxa; they do not by themselves identify complete meals.
Dating
StrongStratigraphy, dendrochronology, coins and other dated finds establish a detailed sequence extending from the mid-ninth to the mid-eleventh century.
Preparation method
LimitedButchery debris and occasional charring provide direct evidence for carcass processing and heat exposure. Bread, porridge, pottage, roasting and boiling are plausible practices but cannot generally be assigned to particular food remains at Coppergate.

The supplied end date of 950 truncates the excavated Anglo-Scandinavian sequence. Major Coppergate reports date relevant deposits from the mid-ninth through the mid-eleventh century, including substantial occupation after 950.

The preferred archaeological framing is Anglo-Scandinavian York, and the animal-bone study found no distinctly Scandinavian dietary signature; cultural and biological identity cannot be assigned directly from the refuse assemblages.
