Goats Are Domesticated in the Zagros

At Ganj Dareh in the central Zagros Mountains, people living around 8200–7800 BCE were doing something fundamentally different from simply hunting wild goats. They were controlling herds descended from the local bezoar goat. The change was gradual, and the animals had not yet acquired all the anatomical traits associated with later domestic breeds. Nevertheless, their bones preserve a strong behavioral signature of management: inhabitants preferentially killed young males while allowing more females to survive into adulthood. Such selective culling retains breeding females while providing meat, a pattern difficult to explain as ordinary hunting.

Ancient DNA reinforces this interpretation. Goats from Ganj Dareh and nearby Tepe Abdul Hosein were genetically distinct from sampled wild goats and ancestral to later domestic populations. Their genomes also show consequences of controlled breeding, although the pronounced changes in body size and horn form familiar from later livestock appeared centuries afterward. Goat hoof impressions in building material offer additional evidence that animals came into close contact with the settlement.

Food at Ganj Dareh was not limited to goat. The faunal assemblage includes sheep, fox, partridge, and many less common taxa, but goats dominate the identified large-mammal remains. Goat meat was therefore probably a major animal food, although no surviving recipe identifies how it was divided, cooked, or served. Hearths make roasting or cooking plausible, but particular dishes remain reconstruction rather than direct evidence. Wild-type barley, lentils, pistachios, and almonds have also been reported. Grinding stones indicate plant processing, while poor botanical preservation prevents confident claims that the barley was domesticated.

Herd management required knowledge rather than a single invention. People had to regulate slaughter, protect breeding females, manage reproduction, and decide when animals should graze near the settlement or elsewhere. Stable-isotope research suggests that winter foddering or movement between elevations may have occurred, but neither practice is conclusively demonstrated. These choices converted mobile prey into a renewable supply of meat, hides, bone, dung, and living animals. They also reshaped daily labor and relations between people, animals, and mountain landscapes.

Milk use at Ganj Dareh remains uncertain. Goats made dairying biologically possible, and a proposed human case of brucellosis has prompted speculation about close animal contact or raw-milk consumption. No milk residue or milk protein has been directly identified at the site, however, so the supplied claim of transformed dairy access is stronger than the evidence permits. The defensible modern connection is broader: the management practices visible at Ganj Dareh formed part of the long domestication process behind domestic goats, animals now raised across diverse environments for meat, milk, fiber, hides, and manure.

Historical context

Ganj Dareh was a small Aceramic Neolithic settlement in a side valley of the central Zagros, approximately 1,400 meters above sea level. The mound measured roughly 40 meters across and ultimately accumulated about 7–8 meters of deposits, probably during only about 100–300 years of intensive occupation. Mud-brick buildings, hearths, burials, stone tools, grinding equipment, and managed animals belonged to a wider but regionally varied transition toward food production across Southwest Asia. Communities in Anatolia, the Levant, northern Mesopotamia, and the Zagros were independently experimenting with cultivation, animal control, sedentism, and seasonal mobility; pottery had not yet become a normal part of life at Ganj Dareh.

Evidence

Archaeological

StrongExcavated occupation deposits contain mud-brick architecture, hearths, tools, burials, abundant animal remains, and goat hoof impressions. Revised archival study indicates a more complex stratigraphy than the original five-level sequence.

Zooarchaeological

StrongGoat mortality profiles show selective slaughter of subadult males and prolonged survival of females, directly supporting controlled herd management rather than ordinary hunting.

Archaeobotanical

ModerateBarley, lentils, pistachios, and almonds have been reported, and grinding stones support plant processing. Poor preservation and ambiguous cereal morphology prevent secure identification of domesticated barley.

Residue chemical

LimitedNo direct milk lipid or milk-protein evidence has been reported from Ganj Dareh. Stable isotopes inform general diet and possible mobility but cannot distinguish goat meat from goat milk consumption.

Food identification

StrongGoat bones dominate the identifiable large-mammal assemblage, strongly supporting goat as an important food animal. Specific cuts, dishes, and culinary combinations are not preserved.

Dating

StrongDirect radiocarbon dates on goat and human collagen overlap and place the principal occupation near 10,100 calibrated years BP, broadly around the opening centuries of the eighth millennium BCE.

Preparation method

LimitedHearths and grinding stones establish heating and plant processing, but they do not identify a specific method used to cook goat meat or demonstrate a particular recipe.

Geographic attribution

StrongThe evidence comes directly from Ganj Dareh in Kermanshah Province, western Iran, within the natural Zagros range of the bezoar goat.

Historical interpretation

ProbableGanj Dareh documents an advanced early stage of goat management and domestication. Domestication was a regional, multigenerational process, and management may have begun before occupation of the site rather than originating there as a single event.
