Carne de sol is lightly salted, partially dried beef associated above all with Brazil’s Northeast. Its English rendering as “sun-cured beef” can be misleading. Traditional production relies on salt, low humidity, and circulating air; direct exposure to strong sun is neither universal nor necessarily desirable. The resulting meat remains softer and more perishable than heavily salted, thoroughly dried charque or carne-seca.

The food emerged from the colonial cattle economy that spread through the northeastern interior, or sertão, as herds supplied draft power, hides, tallow, and meat to coastal settlements and sugar-producing districts. In a hot environment without refrigeration, slaughter created an immediate preservation problem. Salting and short drying reduced available moisture and slowed spoilage, allowing beef to be held and transported longer than fresh meat. The precise moment and place at which the name carne de sol became established are uncertain, however, and an exact origin in 1700 is not documented securely.

Preparation varies by locality and producer. Beef is cut into broad pieces or strips, salted, and rested before being hung or laid in a shaded, well-ventilated place for a comparatively brief cure. Older household and artisanal practice depended heavily on judgment: the amount of salt, thickness of the cut, weather, airflow, and drying time all affected the result. Because the meat is not shelf-stable under every set of conditions, modern commercial versions are commonly refrigerated and may be vacuum-packed. This is an important change from a technique developed where cold storage was unavailable.

Before cooking, strongly cured meat may be soaked, rinsed, or briefly simmered to remove excess salt. It can then be grilled, roasted, or fried, often with onions and regional accompaniments such as cassava, beans, rice, squash, or pirão. Butter—especially bottled butter in northeastern cookery—is a frequent modern partner, but it is not essential to the cure itself. Recipes therefore describe a family of preparations rather than one fixed formula.

Carne de sol mattered because it converted cattle into a more manageable food supply across long distances and irregular slaughter cycles. Its history also belongs to a colonial economy shaped by land appropriation, harsh ranch labor, and slavery; preservation cannot be separated from the unequal system that produced and moved the meat. Refrigeration eventually reduced the practical need for partial drying, yet the technique endured because diners valued its concentrated beef flavor and firm texture. Today carne de sol appears in homes, markets, restaurants, and dishes such as grilled beef with cassava or creamy purées. Modern hygiene controls and cold chains have altered production, but the central combination—beef, salt, airflow, and a short cure—remains recognizable.

Historical context

Portuguese America was dominated economically by coastal sugar production, while cattle ranching expanded into the drier northeastern interior because herds competed with cane for valuable coastal land. Enslaved Africans and their descendants formed a large part of the labor force, alongside Indigenous and free or coerced workers. Around the turn of the eighteenth century, gold discoveries in Minas Gerais accelerated migration, trade, and demand for livestock and preserved provisions. Roads were poor, journeys were slow, and mechanical refrigeration was still more than a century away, making salt, drying, and airflow essential tools for managing perishable meat.
