Spruce beer was historically a family of conifer-flavored drinks rather than one fixed recipe. In Québec, sweet spruce soda survived after the military and medical rationale receded. Bottled and fountain versions retained a flavor often described as piney, wintergreen-like, or resinous. Contemporary homemade versions usually steep spruce tips, add sugar and citrus, and combine the strained syrup with sparkling water. This is best understood as a modern interpretation of the older beverage, not an exact reproduction. Spruce beer’s lasting significance lies in that transformation: an improvised fermented provisioning drink became a regional soft drink whose aroma still evokes the northern forest.

Historical context
The Seven Years’ War was drawing New France and Britain’s Atlantic colonies into a struggle supplied across thousands of kilometres of ocean and inland waterways. New France had only tens of thousands of European settlers, concentrated along the St. Lawrence, while garrisons and ships depended heavily on preserved provisions. Molasses and sugar arrived through Atlantic trade, but fresh produce was sharply seasonal, making locally gathered conifer growth attractive as both flavoring and a possible defense against scurvy.
