Grappa is a strong spirit made from grape pomace—the skins, seeds, pulp, and sometimes stems remaining after grapes have been pressed for wine. Its defining idea is economical rather than luxurious: recover fermentable material and aroma from a winery residue that might otherwise become compost, animal feed, or waste. Pomace spirits developed in several European wine regions, and the emergence of Italian grappa belongs to that wider history of distillation rather than to a securely documented moment of invention.
A document dated 1451 from Friuli is frequently associated with grappa’s early history because it records distilling equipment and aquavit. It is important not to overread it: evidence for a still or distilled wine does not by itself prove that grape pomace was the charge. Traditional production begins with fresh pomace. Because compacted pomace can spoil, producers must store and process it carefully. Water or steam carries volatile alcohol and aromas through a still. Distillers discard or segregate the early and late fractions and retain the central “heart,” although historical household equipment offered much less control than modern installations. The spirit may then rest in inert vessels, mature in wooden casks, or be diluted with water to its final strength.
The drink acquired associations with farmers, vineyard laborers, and cold-weather hospitality, but this familiar image should not obscure its commercial history. Governments taxed and regulated distillation, while mobile distillers and small local plants connected wineries to specialist production. Industrial equipment improved temperature control, fraction separation, consistency, and safety. These changes mattered because careless distillation can concentrate undesirable volatile compounds, while grape seeds and stems can contribute rough flavors if poorly handled.
Modern grappa ranges from clear, young blends to cask-aged spirits and bottlings made from the pomace of named grape varieties. Its aroma may suggest grape skins, flowers, herbs, fruit, or wood, but it contains little of wine’s sugar or nutrients; most of its energy comes from ethanol. Grappa remains distinguished from brandy because brandy is distilled primarily from wine, whereas grappa begins with the solid residue of pressing. Its lasting importance lies in that conversion of an agricultural by-product into a regulated product of considerable cultural and economic value.
