Molasses rum

Molasses rum arose from the seventeenth-century Caribbean sugar complex. Sugar makers crushed cane, clarified its juice, and boiled it repeatedly until sugar crystals formed. The viscous syrup left after crystallization—molasses—still contained fermentable sugars. Plantation workers and distillers diluted it with water, encouraged fermentation, and heated the resulting wash in a still. Alcohol-rich vapor condensed into a strong, transportable spirit. The spirit entered Atlantic commerce alongside sugar and enslaved people, although the familiar simplified image of a fixed triangular trade does not capture the many changing routes involved. Rum also became associated with sailors, colonial troops, taverns, and naval provisioning; diluted rum rations were especially prominent in the British maritime world.

Modern molasses rum preserves the basic sequence of dilution, fermentation, and distillation, yet industrial yeast cultures, continuous stills, analytical quality control, regulated aging, and global branding have transformed production. Some distilleries emphasize local pot-still traditions or distinctive high-ester fermentations, while others make neutral, cocktail-oriented spirits. Rum remains economically and culturally important across the Caribbean, but responsible interpretation must hold its technical creativity and regional identity together with the plantation slavery and colonial extraction that enabled its early expansion.
